Gourmet Strawberry Balsamic Popsicles

Gourmet Strawberry Balsamic Popsicles are like a strawberry popsicle, but better. With a berry balsamic and vibrant strawberries.

Summertime calls for refreshing treats; fresh fruit and ice pops are tied for number one in our book.ย  So how do you take your favorites and combine them into one incredible treat?ย  It occurred to me when I was making the balsamic reduction for the Gourmet Caprese Burger.ย  After reducing the balsamic, it was so amazing I was literally licking it off the spoon.ย  So, I had to make a second batch, okay and a third too.ย  I could not stop eating it and drizzling it on everything.ย  I realized that first of all, Fresina’s should look into turning their Signature Balsamic into lollipops.ย  Seriously.ย  I would buy them!

But second, this balsamic would be fantastic in desserts.ย  I immediately thought of the classic strawberries and balsamic and decided to make an ice pop.ย  I opened the bottle of Casa Rinaldi Balsamic Vinegar infused with Wild Forest Berries.ย  It is very smells fruity, it is thick, almost like a syrup.ย  The taste?ย  Heavenly!ย  Balsamic and fruit.ย  I went to work right away on these ice pops.ย  The Wild Forest Berry Balsamic would be perfect.

I was so right!  The popsicle is unbelievable!  It really tastes like a strawberry popsicle, but better.  The strawberries taste more vibrant, the berry balsamic lends itself to this ice pop perfectly.  With a special ingredient to really make the flavors pop, these are now my favorite popsicle.  I am sure you will love them too!

Well, of course I had to test the Wild Berry Balsamic a little more.ย  I made 2 dishes of vanilla ice cream and drizzled them with balsamic.ย  One for me and one for my picky 2 year old.ย  We were Skyping with Nana at the time and she was totally floored.ย  She couldn’t believe we were going to have balsamic vinegar on ice cream.ย  That was until my picky 2 year old devoured the ice cream and the balsamic and lifted the bowl up to lick the rest out of the bowl.ย  She is a believer and really is excited to try their balsamic vinegars.

I have been so pleasantly surprised by Fresina’s.ย  A lot of companies talk about being passionate about their businesses and taking pride in their products, Fresina’s means it!ย  Their handmade pastas are amazing, the flavor and texture is unlike anything I have had before in a dried pasta.ย  With no additives, no preservative and no artificial coloring it is something I was proud to feed my family.

Admittedly I am a red sauce snob.ย  I rarely order Italian food when we are out.ย  Never order marinara with my bread sticks.ย  I am pretty hard to please in that department.ย  So of course I thought I would be adding my own sauce on their fantastic pasta.ย  Again, I was pleasantly surprised, their Signature Sauces are fantastic!ย  Honestly, the only thing I did was add some cut up left over grilled hamburgers (yeah I’m fancy like that sometimes) into the sauce as it warmed and served it over the pasta.ย  Munchkin and I both devoured it and had seconds.ย  I had to pry myself away from the pasta bowl.ย  So amazing!

Strawberry Ice Pops with Wild Berry Balsamic

Ingredients
 

  • 4 cups fresh strawberries, about 1 ยฝ pounds, washed and hulled
  • 2 tablespoons granulated sugar
  • 2 tablespoons balsamic vinegar, wild berry balsamic preferred
  • 1/8 teaspoon fresh ground black pepper

Instructions
 

  • MACERATE STRAWBERRIES: Place 4 cups strawberries in a medium bowl and sprinkle with 2 tablespoons granulated sugar. Toss to coat and let sit for 30 to 60 minutes until the strawberries release their juices.
  • BLEND MIXTURE: Add the strawberries and their juices to a blender. Add 2 tablespoons balsamic vinegar and โ…› teaspoon fresh ground black pepper. Pulse until a slightly chunky puree forms.
  • FILL MOLDS: Pour the mixture evenly into popsicle molds, leaving about ยผ inch of space at the top.
  • INSERT STICKS: Cover the molds with lids or aluminum foil and insert popsicle sticks.
  • FREEZE: Freeze for at least 12 hours, or until completely frozen.
  • SERVE: Run warm water over the outside of the molds for about 10 seconds to release the popsicles. Serve immediately.

Donna’s Notes

Make-Ahead: These popsicles can be made several days in advance and stored in the freezer until ready to serve.
Storage: Store popsicles in a freezer-safe container or bag for up to 2 weeks.
Freezing Tip: If the popsicles stick to the mold, run warm water over the outside for a few seconds to release them easily.
Ingredient Tip: Use ripe, sweet strawberries for the best flavor. If your berries are very sweet, you can reduce the sugar slightly.

  4. Where do you get such big chunky popsicle molds like this? I always see dinky flimsy ones! I'm sure this recipe is as divine as figs and balsamic vinegar ice cream, I think I passed out from pleasure trying that ice cream for the first time.
