Back to School - Bite Size Meals

Kid's are going back to school and you need the perfect easy food!  Here are 10 Quick and Easy Bite Size Meals to simplify mealtime.
As we all prepare for back to school I have found myself shopping, researching and planning.  Munchkin starts 1st grade this year.  The supplies list is as long as my arm.  Scissors, pencils, markers, notebooks, laptop, paper, art supplies, folders, paints... The list goes on and on.  You would think we were starting our own academy.

I know everyone is preparing as 100 other parents are in the back to school aisle with us.  They are aimlessly wandering the aisles like zombies with a list in hand.  I do hope I am a little more organized, but even so it is overwhelming.  Like most parents I feel lost gathering these supplies for my kid.

However, I feel more confident preparing healthy meals for my 1st grader.  I am an expert in the kitchen, not the back to school aisle, so answering all of the anxious parents requests for recipes that can be made ahead, frozen and reheated and are healthier options for the kids to take to school or eat after school is my forte.  We decided to put together our favorite bites for our Munchkin.  She loves them and I am sure you will too!  Either way, all these meals will be a hit with your family.

Bite Size Cheesy Pepperoni Pizza Puffs in 30 Minutes are just like Munchkins favorite pizza in bite size!  Can't get much more fun than that. Perfect for a fun Friday afternoon or dinner for the family.  They freeze perfectly.  Spritz them with water and either microwave them until heated or defrost and pop them in a 350°F oven for about 10 minutes.

Southwestern Ham and Cheese Quinoa Bites pack some great southwestern flavor.  Ham and cheese is always a winning combination add in a few secret ingredients and you have yourself a perfect bite sized meal.  These freeze great.  I store them in a gallon resealable bag.  Take them out and Spritz them with water and either microwave them until heated or defrost and pop them in a 350°F oven for about 10 minutes. 

Broccoli and Cheese Quinoa Power Bites are loaded with vegetables and healthy protein and are absolutely delicious.  What's even better is that they freeze fabulously.  I make a batch of these and freeze them.  Then I can defrost them on the day I wish to serve them or pop them in the oven or microwave frozen.

Healthy Homestyle Baked Chicken Nuggets are low calorie, low fat & incredibly delicious. Crispy on the outside and moist and tender inside.  Perfect for toddlers, and kids young and old.  Make ahead & freeze! Toss them in the oven for 10 minutes and serve.

  1. Wow these are great. Much healthier than packing a bag of chips for the kid to munch on during break time down or after school. These can even be a lunch meal. I'll have to show these to my little brother and see which ones he'd like best.

  4. I am living by myself and finding cooking to be rather difficult. (Besides, who enjoys eating alone!!) But, I have seen so many recipes that sound interesting and good that I have subscribed to this list. Thank you!
