Buffalo Chicken Meatballs

Buffalo Chicken Meatball Poppers! Seriously. Do your family and friends devour wings?  You are going to love this recipe that is perfect for game day AND dinner. I love an easy appetizer and this one is great to make ahead, freeze, defrost and heat in a 350°F oven.  Or pop them in the microwave.  Packed with sausage & wing flavors these are addictively poppable!  Made with chicken they are light, flavorful and delicious. 

I have a 'thing' for meatballs, you could even call it love.  I adore them for so many reasons.  Meatballs are limitless, any meat, or no meat.  Any flavor, any style.  Serve them for dinner, game day appetizer, fancy them up for a cocktail party.  There are absolutely no boundaries or rules with meatballs, okay perhaps one rule...

They should be somewhat round.

I got the coolest gift from Chad (my amazing husband) for Christmas.  Mind you, all I 'asked for' was a rosemary plant.  He knocked this one out of the park.  He bought me a manual food grinder.  I kind of looked at it funny at first (it had pictures of pasta on it).  I guess it makes pasta too.  Who knew?

I have been grinding my own meat for about a month and I am addicted.

I had to try some new meatball recipes with my new found love.  These buffalo chicken meatball poppers are crazy good!!  The flavors are built to taste like chicken sausage and buffalo wings.  The sauce is a must, it really takes these over the top.  You are going to love them. Made with my favorite 1 tablespoon scooper, making them the perfect size and the ultimate appetizer for your Super Bowl Party.  We also love them served for dinner served over a bed of rice.  No matter how you eat them you are going to be crazy for them!!!

Sweet and Sour Meatball Poppers are scrumptious eaten alone or served with rice and vegetables.  You can't go wrong with this crowd pleaser.  Make ahead for the Super Bowl and freeze.


Buffalo Chicken Meatball Poppers
makes 90 (1 tablespoon) meatball poppers

1 pound ground chicken breast
½ cups Italian breadcrumbs
1 teaspoon crushed red pepper flakes
½ teaspoon cayenne pepper
1 teaspoon poultry seasoning
½ teaspoon ground coriander
1 teaspoon garlic powder
½ teaspoon ground fennel seed
1 teaspoon kosher salt
½ teaspoon fresh cracked black pepper (fine grind)
1 large egg, lightly beaten
2 tablespoons milk
2 tablespoons buffalo hot sauce

Wing Sauce
1 cup Frank’s buffalo sauce
8 tablespoons (1 stick) unsalted butter
6 tablespoons honey

Preheat oven to 350°F.  Prepare 2 baking sheets by lining with parchment paper.

In a large mixing bowl, combine all ingredients. Mix well, do not over mix or you will have tough meatballs.    Using a 1 tablespoon scoop, scoop out meat and place on baking sheet.  After all meatballs have been scooped onto tray, roll into balls.  TIP:  If you lightly wet your hands the meatballs will form better and crack less.  Bake for 20-25 minutes (for 2 trays).

While meatballs are baking, prepare wing sauce.  In a medium saucepan over medium heat combine all ingredients.  Stir to combine cook until ingredient come together.  About 5 minutes.

Remove meatballs from oven and transfer to sauce and serve.

  4. Made these for dinner tonight - and they were great! Super easy to prep and bake. I used a larger scoop, so only got 24 meatballs, and baked them 30 minutes and they were perfect. I bake my meatballs on a cookie cooling rack, to evelate them a bit. The sauce was great - loved the addition of honey. Served them with some cheesy polenta. Will be making them again for dinner, and as a fun appetizer! Thanks for the recipe. Can't wait to try more of your interesting meatball recipes.

  5. Can you make these with ground beef as well?

    1. You can, but I would use chicken. The flavors are made to go with the chicken which has less flavor than beef.

  6. Wonder if adding a breaded coating wouldn't put these over-the-top as they'd be even MORE winglike with their crispy exterior....guess you'd have to add the hot sauce before coating them right? Has anyone tried this?

    1. Or maybe coat them in grated parmesan cheese and broil for the crunchy noms

  8. Can you make these ahead of time and freeze them?

    1. Absolutely! Defrost and bake at 350 for 10 minutes. Enjoy!

    2. Bake then freeze or freeze uncooked?

    3. Cook first, then freeze. Although you could prepare them and freeze before cooking and then toss them in a crockpot frozen and cook (may take 1 hour longer). Hope that helps!

    1. Italian bread crumbs are seasoned already with Italian herbs.
