Because this homemade soft serve ice cream is made from frozen fruit, it’s also known as “nice cream.” 

Before it became crazy popular and loads of other flavors were created, the original nice cream was made with nothing but a frozen banana — talk about easy!! 

I’m telling you, this frozen fruit ice cream is so flipping creamy and delicious, you won’t even realize that it’s a healthy treat.

In addition to being healthy, it also just happens to be dairy free, and the best part is: you control the sweetness.

Why We Love Frozen Fruit Ice Cream

Unlike traditional ice cream, which contains a lot of sugar and heavy cream, this healthy banana strawberry ice cream is a naturally sweetened frozen treat. 

The sugar in this recipe is completely optional! You can leave it out entirely if you prefer. Or, you can use a liquid sweetener like Stevia or honey instead.

It’s a much better choice for anyone that is watching their calories or is lactose intolerant. Just keep in mind that bananas are high in sugar on their own.

How to Make Banana Strawberry Ice Cream

Simply slice up the frozen fruit and add it to a high-power blender or a food processor.

Be sure the lid is on tight, then blend until the frozen strawberries and bananas become creamy and smooth. That’s all there is to it! Easy, right?

Tips for Perfect Homemade Soft Serve Ice Cream

  • Changing the consistency. If you want soft and creamy fruit ice cream, you can eat it right out of the blender. 

    However, if you want ice cream that is a bit more solid, place the mixture in the freezer for a couple of hours.

    Keep in mind — since there are no preservatives, homemade soft serve ice cream will freeze up rock hard. To soften, just remove it from the freezer 10 minutes before you want to serve it.
  • Always use ripe bananas when you make this treat. If they are still a bit green, the strawberry banana ice cream won’t be sweet enough.
  • Using a regular blender. If you don’t own a high-powered blender or a food processor, you can use a traditional blender. 

    But, the consistency will be better if you cut your bananas into slices before you freeze them.

Frozen bananas are key to the creamy texture of this frozen dessert. There isn’t a good substitute for them that I know of. 

That said, there are many different flavor variations you can make!! Here are a few suggestions to get you started:

  • Blueberry and banana 
  • Cocoa powder and banana
  • Peach and banana
  • Coconut milk with pineapple and banana
  • Nutella and banana

How long does homemade ice cream last in the freezer? 

This banana strawberry ice cream can be frozen for up to 2 months in an airtight container. That’s because it’s simply blended frozen fruit!

Just be sure to soften it on the counter before serving.

Dairy-based recipes only last for 1 to 2 weeks, making this easy fruit ice cream a great make-ahead option.

Can you make bananas ripen more slowly? 

If you have bananas that are ripening too fast, just peel them and put them in the freezer to use in the future.

As a bonus, when you start craving strawberry banana ice cream, your bananas will already be frozen and ready to use!

Ingredients
 

  • 4 large bananas, sliced and frozen (about 4 cups)
  • 16 ounces frozen strawberries, about 4 cups
  • 2 tablespoons granulated sugar, optional

Instructions
 

  • SOFTEN THE STRAWBERRIES (OPTIONAL): If using a standard blender or if the berries taste underwhelming, place the 16 ounces frozen strawberries in a microwave-safe bowl, sprinkle with the 2 tablespoons granulated sugar, and toss to coat. Microwave in 30-second bursts, stirring between each burst, until the berries soften and the sugar dissolves into a glossy syrup, about 1 to 2 minutes total. Skip this step if your high-powered blender handles fully frozen fruit.
  • LOAD THE BLENDER: Add the 4 large bananas, sliced and frozen, and the strawberry mixture (with all the syrup) to the blender pitcher. Cover with the lid.
  • BLEND TO SOFT-SERVE: Blend on high for about 30 seconds. The fruit will stop spinning, which is your cue to stop, scrape down the sides of the pitcher with a rubber spatula, and stir the bottom to redistribute the fruit. Repeat the blend-and-scrape pattern 3 to 4 more times for about 2 to 3 minutes total, until the mixture turns smooth, creamy, and pale pink with a soft-serve consistency.
  • SERVE OR FIRM UP: Spoon the ice cream into bowls and serve right away for the softest, creamiest texture. For a firmer, scoopable consistency, transfer to a freezer-safe container, smooth the top, press a piece of plastic wrap directly against the surface, and freeze for 2 to 3 hours.

Soften Before Scooping: This ice cream has no preservatives or stabilizers, so it freezes solid in the freezer. Pull it out 10 to 15 minutes before serving and let it sit on the counter until it’s scoopable. That is all it needs.
Storage: Once frozen solid in an airtight container, this ice cream keeps in the freezer for up to a year.
Equipment Tip: A high-powered blender (think Vitamix or Blendtec) handles fully frozen fruit in one shot. A standard blender works too. Just slice the bananas before freezing and pre-soften the strawberries per Step 1 to give the motor a fighting chance.
Variations: Swap strawberries for mango, pineapple, or peaches (same 16-ounce weight). The frozen banana is the magic. It gives the ice cream its creamy, soft-serve structure no matter which fruit you pair with it.
