Chicken Rigatoni + Video

Chicken Rigatoni is a one pan meal with flavors like the classic Italian dish! Tender pasta, a robust sauce and lots of Parmesan!! This one pot recipe makes a scrumptious and easy weeknight dinner.

Chicken Rigatoni

It’s so easy to make this one pan meal, and you may already have everything you need on hand! Start by browning the chicken with the aromatics, then simmer together with the noodles and liquids until done.

Once the pasta is cooked to al dente, add the shredded cheese and let it melt. Then, spoon into bowls and top with fresh basil.

Helpful Tips and Recipe Notes

  • Prep in advance: Chop the onion and shred the cheese up to a day ahead of time. Store covered in the refrigerator until you’re ready to throw this dish together.

  • Shred cheese yourself: Pre-bagged shreds have a preservative that gives them a waxy texture and prevents them from melting fully.

  • Using a different pasta: Any short pasta will work, as long as there are cracks and crevices to hold the sauce and cheese. Penne, rotini, and ziti are great choices.

  • Like it extra cheesy? Feel free to add an additional 1/2 cup of either cheese if you’d like.

  • Make a topping: If you’d like, toss some breadcrumbs with a little melted butter and sprinkle over the top of the chicken parmesan pasta. Then, pop it under the broiler for a few minutes until browned.

    Tools you'll need for making one pot pasta

    • Skillet The entire meal cooks in one skillet to make prep and clean up easy. Use a wide skillet so the pasta cooks evenly.

    • Cutting board A big solid cutting board makes prepping veggies a breeze. I use mine daily, so it’s worth the investment to get a good quality one.

    • Garlic Press A garlic press is a necessary tool in any kitchen to add fresh minced garlic flavor.

    • Box Grater - As much as I love buying shredded cheese because I'm lazy, freshly grated cheese melts down so much better and creates a smoother recipe.

    Storing and Reheating Chicken Rigatoni

    Transfer leftovers to a sealed container and keep in the refrigerator for up to 4 days. Or, divide this one pan meal into individual portions for a week of easy lunches!

    Reheat in the microwave or on the stove until warmed through. You may need to add a splash of water or broth for moisture and feel free to sprinkle on some more shredded cheese as well.

    I don’t recommend freezing this dish. Unfortunately, the process of thawing and reheating gives the noodles and cheese an unpleasant texture.

    Chicken Rigatoni + Video

    Chicken Parmesan Pasta is a one pan meal with flavors like the classic Italian dish! Make this pasta recipe for an easy weeknight dinner.

    prep time: 5 mins   cook time: 35 mins   total time: 40 mins


    • 1 pound chicken breast, cut into 1 inch pieces
    • salt and pepper
    • 2 tablespoons olive oil
    • 1/2 cup diced yellow onion
    • 1 tablespoon minced garlic
    • 12 ounces rigatoni pasta
    • 2 cups marinara sauce
    • 2 cups chicken or vegetable broth
    • 1/2 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • chopped fresh basil, for garnish


    1. Season chicken with salt and pepper; set aside.
    2. In a 12” pan or skillet, heat olive oil over medium heat. Add onions and stir until soft, about 3 minutes. Add chicken to pan and cook until brown on both sides. Stir in garlic and cook one additional minute. Add uncooked pasta, sauce and broth. Stir then bring to a boil.
    3. Reduce heat to low, cover and simmer for 20 minutes, or until pasta is al dente. Sprinkle with mozzarella and parmesan cheese. Cook until cheese is melted. Garnish with fresh basil.
