Cherry Limeade Pound Cake

Cherry Limeade Pound Cake is a simple recipe for a moist and tender cake speckled with cherries and ribbons of lime zest.  As if that isn't perfect enough, it's topped with a cherry lime glaze that will knock your socks off.

I was so excited to receive a copy of my friend Lori's new cookbook; The RecipeGirl Cookbook!   336 pages packed full of easy recipes for the home cook.  You know I love 'simple' and Lori's recipes are right about my speed.

Munchkin and I dove into the cookbook with a brand new pack of sticky notes {{geek alert}}.  What, doesn't everyone?  I was delighted to find simple recipes for breakfast, lunch, dinner, dessert and every where in between.  Y'all know I love to entertain and there is a section for party planning that made my heart happy.  Needless to say my book already is well loved and covered in sticky notes, marking recipes to try.


I read a list of recipes to sample to Chad and Munchkin and we agreed that the Cherry Limeade Pound Cake that is inspired by Sonic's famous summer cool down drink the cherry limeade was just the way to go.  

The cake was so easy to put together and I opted for maraschino cherries to make it ever easier, but you can certainly use fresh sweet cherries too!  The cake was in the oven in 20 minutes and just tasting the batter made me antsy to get the cake in my mouth!

While the cake was cooling I put together the glaze and let the cake sit.  We waited and waited for what seemed like forever  before we served this fabulous cake at Chad's mom Gigi's retirement dinner.  It was insane!

A moist and tender cake speckled with cherries and ribbons of lime zest is topped with a cherry lime glaze that will knock your socks off.  You are going to love it!  It was so good I had to give away the left overs.

Layer upon layer of cookies, cream and luscious strawberries make up this insanely simple and delicious no-bake strawberry shortcake ice box cake recipe.  The fabulous vanilla whipped cream frosting will certainly knock your socks off.



Caramel Apple Pecan Bundt Cake - Applesauce and grated apples really create a sensationally flavored apple cake.  Hints of cinnamon and nutmeg along with the pecans make it purely fabulous and the caramel glaze on top makes it sinfully delicious.  It is moist, flavorful and perfect for your holiday table.

Simple Death by Chocolate Bundt Cake is a simple moist chocolaty cake loaded with cocoa, semi sweet chocolate, milk chocolate, white chocolate and all the same in toppings with a gorgeous ganache.  This cake is insanely rich and delicious.

PRINT RECIPE

Cherry Limeade Pound Cake
Slightly adapted from The RecipeGirl Cookbook pg. 278
SERVES 10-12  |  ACTIVE TIME 30Min  |  TOTAL TIME 1 Hour 45 Minutes


3 cups all-purpose flour
½ teaspoon salt
3 cups granulated sugar
1 ½ cups (3 sticks) unsalted butter, room temperature
1 tablespoon fresh grated lime zest
5 large eggs, room temperature
¾ cup Cherry 7-Up *See Cook’s Note for substitutions
2 (10 ounce) jars Maraschino cherries, drained

GLAZE
1 ½ cups powdered sugar
2 tablespoons Cherry 7-Up
1 tablespoon fresh grated lime zest

Preheat oven to 325°F.  Butter and flour a 12-cup Bundt pan.  Reserve 10 Maraschino cherries (to be used in glaze).

In a large bowl, use an electric mixer to combine butter and sugar.  Add lime zest.  Beat in eggs one at a time until well combined.  Add flour mixture 1/3 at a time, alternating with 7-Up.  Add remaining cherries, stir to combine.

Pour batter into prepared Bundt pan.   Tap pan on the counter several times to release air bubbles.  Bake 1 hour 15 minutes or until a thin sharp knife comes out of the center clean.  Place on a wire rack to cool for 20 minutes.  Place a plate over the pan and flip cake onto plate to continue cooling completely.  You may have to tap pan a few times with a knife to release from pan.

While cake is cooling chop reserved Maraschino cherries.  In a medium bowl combine cherries and glaze ingredients.  Beat with an electric mixer until well combined.  Glaze should be the consistency of corn syrup, add more powdered sugar (a tablespoon at a time) if necessary to thicken glaze.

Drizzle the glaze over the cooled cake.  Serve and enjoy!

COOK’S NOTE:  If you only have regular 7-Up just add a splash of maraschino cherry juice and make sure the liquid still measures ¾ cup in the cake.  For the glaze use 1 ½ tablespoons soda and ½ tablespoon maraschino cherry juice.

  16. My wife makes the most incredible tasting charcoal BBQ Chicken. There are so many other wonderful summer tastes such as fresh watermelon, pistachio ice cream, kosher hot dogs with honey mustard, and a really good old fashioned potato salad. That's why I live in California because our summer is almost 12 months long.

  37. Summer flavors for me are definitely watermelon, mango, papaya and raspberries. The papaya chilled with lemon is super refreshing and on the hot and humid MN days, I just throw a mixture of these in a blender with a lot of ice and make a smoothe! Makes the day soooo much better!

  135. The summer brings out all the freshness of the gardens and the markets and I just love to try everything I can get a hold of. Whether it be something exotic like Dragon Fruit or everyday like green beans. I love the sugary snap peas mixed with a variety of different lettuces, dandelion leaves, kale and then add some fresh fruit it doesn't matter which kind and a homemade vinaigrette. Blueberry vinaigrette with maple syrup or strawberry. The possibilities are endless and I wish summer was as well. Fresh cherries that just go pop in your mouth because they are bursting with flavour. Such an abundance of flavours yet to be explored. I'll take it all. For picnics we always have strawberry dip (8 oz. cream cheese blended with a jar of marshmallow fluff), I make a double batch and go to the local strawberry farm and buy a huge flat, I dip some of the strawberries in melted chocolate, and place the rest on a large platter with the strawberry dip, it's usually the first thing to disappear... I so love them... Also, my mom's wonderful homemade fresh strawberry pie is out of this world good !!!!!!!!!!
