These no bake strawberry cheesecake bars blend fresh strawberries right into the cream cheese filling, then fold in real whipped cream for a light, fluffy set.

A pinch of salt in the crust and the filling keeps all that sweetness bright instead of heavy.

Why You’ll Love These No Bake Strawberry Cheesecake Bars

  • Real strawberries go in twice, blended into the filling and folded in as juicy bits.
  • Real whipped cream, not a tub of topping, so every bite tastes like a bakery cheesecake.
  • The parchment handles lift the whole slab out, so you get neat, tall squares.

I have to tell you, I am a huge cheesecake fan. As a matter of fact, cheesecake was one of my mom and dad’s favorite desserts. And it seems to be hereditary. {{{wink}}}

So a cheesecake that skips the oven, comes together with no fuss and is loaded with strawberries? That’s a win-win for everyone.

These bars are cool, creamy and pretty in pink, and they’re waiting in the fridge whenever the craving hits.

With as many cheesecakes as I’ve shared on this site, I can tell you that soft cream cheese is everything.

Cold cream cheese has firm fat in it, and those little lumps never blend out, no matter how long the processor runs.

There’s no gelatin in these bars. The set comes from two things: the air you whip into the cream and the cream cheese firming back up as it chills.

That’s why you fold gently and give the pan the full 4 hours, or overnight for the cleanest slices.

And that pinch of kosher salt? It doesn’t make the bars taste salty. It makes the strawberry and vanilla taste brighter. I know you want to sneak a square at hour two. Give it the full four.

Ingredient Notes

Cream cheese: Use the 8-ounce blocks, not the soft tub-style spread. Blocks have less water, so the filling sets up thick and creamy.

Strawberries: Ripe, deep red berries give you the prettiest pink and the sweetest flavor.

Heavy whipping cream: Whipping your own cream gives the bars their light, mousse-like texture and a rich, real-dairy taste.

Graham cracker crumbs: A box of crumbs saves a step, or crush whole graham crackers in a zip-top bag with a rolling pin.

How to Serve

Strawberry syrup: Drizzle my Simple Strawberry Syrup Recipe (3 Ingredients) over each square for a sweet, extra-fruity finish.

Fresh berries and cream: A dollop of whipped cream and a sliced strawberry on top makes every square party-ready.

Frequently Asked Questions About No Bake Strawberry Cheesecake Bars

Can I make no bake strawberry cheesecake with Cool Whip?

This recipe uses real whipped cream for the richest flavor and a firmer set. Cool Whip folds in the same way, but the bars come out sweeter and softer.

How long does no bake cheesecake need to set?

At least 4 hours in the refrigerator, or overnight for the cleanest slices. It’s ready when the center feels firm when you press it lightly.

Why is my no bake cheesecake filling lumpy?

The cream cheese was too cold. Let the blocks sit on the counter until soft, and they’ll blend silky smooth.

Can I use frozen strawberries?

Yes! Thaw them, drain them well and pat them dry before dicing, so the extra juice doesn’t soften the filling.

Can you freeze no-bake strawberry cheesecake?

Absolutely. Wrap the bars tightly and freeze for up to 3 months, then thaw them overnight in the refrigerator.

Method No Bake
Servings 16 bars

Ingredients

For the Crust

  • 7 ounces graham cracker crumbs, about 2 cups
  • 1 stick unsalted butter, melted, 1/2 cup
  • 1/4 cup granulated sugar
  • 1/4 teaspoon kosher salt

For the Filling

  • 16 ounces cream cheese – two 8-ounce blocks, softened, (about 2 cups)
  • 8 ounces fresh strawberries, hulled and diced, divided, (about 1 1/2 cups)
  • 1 cup granulated sugar
  • 1 tablespoon pure vanilla extract or vanilla bean paste
  • 1/8 teaspoon kosher salt
  • 8 ounces heavy whipping cream, cold (about 1 cup)

Instructions

  • PREP THE PAN: Spray a 9×9-inch baking dish with nonstick cooking spray, then line it with parchment paper, leaving a little extra hanging over two sides. The extra paper works like handles, so you can lift the bars out in one piece later.
  • MAKE AND CHILL THE CRUST: In a mixing bowl, stir together 7 ounces graham cracker crumbs, about 2 cups), 1 stick unsalted butter, melted, 1/4 cup granulated sugar, and 1/4 teaspoon kosher salt until every crumb is moistened and the mixture looks like wet sand. Squeeze a little in your hand. It holds together when it is ready. Press it firmly and evenly into the bottom of the dish with the flat bottom of a measuring cup. A firm press keeps the crust in one piece when you slice the bars. Place the dish in the refrigerator to chill while you make the filling.
  • BLEND THE STRAWBERRY CREAM CHEESE: Add 16 ounces cream cheese – two 8-ounce blocks, softened, 8 ounces fresh strawberries, hulled and diced, divided, 1 cup granulated sugar, 1 tablespoon pure vanilla extract or vanilla bean paste, and 1/8 teaspoon kosher salt to a food processor or blender. Process for 2 to 3 minutes, stopping once to scrape down the sides, until the mixture is completely smooth, creamy and pink. Softened cream cheese blends silky smooth. Cream cheese straight from the refrigerator stays lumpy no matter how long you blend it.
  • WHIP THE CREAM: Pour 8 ounces heavy whipping cream, cold (about 1 cup) into a separate mixing bowl. Beat with a hand mixer on medium-high speed for 3 to 4 minutes, until soft peaks form. When you lift the beaters, the cream stands up in a peak that gently curls over at the tip. Cold cream whips up fastest and holds its shape best.
  • FOLD IT ALL TOGETHER: Add the whipped cream and the remaining 1/2 cup diced strawberries to the strawberry cream cheese mixture. Use a spatula to gently fold, scooping from the bottom and turning it over the top, until the filling is one even color. Gentle folding keeps all the air you just whipped in, so the bars stay light and fluffy.
  • FILL AND CHILL: Pour the filling over the chilled crust and spread it into an even layer. Cover the dish and refrigerate for at least 4 hours, or overnight for the cleanest slices. The bars are ready when the center feels firm when you press it lightly with a finger.
  • SLICE AND SERVE: Lift the bars out of the dish by the parchment handles. Cut into 16 equal squares (4 rows by 4 rows) with a sharp knife, wiping the knife clean between cuts for neat edges. Top with whipped cream, fresh strawberries or strawberry sauce if you like.

Donna’s Notes

STORAGE: Cover and refrigerate. The bars taste best within 2 days, while the strawberries are freshest, and keep for up to 4 days.
FREEZING: Wrap the bars tightly or place them in an airtight container and freeze for up to 3 months. Thaw in the refrigerator overnight before serving.
INGREDIENT TIP: Frozen strawberries work too. Thaw them, drain them well, and pat them dry with paper towels before dicing.
