Ooey Gooey S’mores Brownies

S’mores Brownies combine two classic treats into one decadent dessert! Gooey marshmallow, melty chocolate, and crispy graham crackers weren’t enough… It’s all baked on top of a thick, fudgy brownie layer. This recipe takes homemade brownies to a whole new level!!

S’mores Brownies
Indulge yourself in a delicious combination of extra fudgy brownies topped with crunchy graham cracker pieces and gooey, toasted marshmallows.
The combination of two popular chocolatey desserts in this s’mores brownie recipe will blow your taste buds away!
They’re like classic s’mores in brownie form, and I’ve been obsessed since the first time that I made them.
I love coming up with new ways to take brownies to the next level. Whether it’s for a holiday theme or to curb a chocolate craving, each one is better than the next.

Ingredient Notes and Substitutions
- Unsalted Butter – Essential for baking since you never know how much salt is in your butter — it varies by brand! If you need to use salted sticks, omit the additional salt in the recipe.
- Cocoa Powder – Since we’re making the brownie layer from scratch, the quality of your cocoa makes a big difference.
Use unsweetened cocoa powder from a trusted brand. Ghirardelli is one of my favorites! - Eggs – Pull these out of the refrigerator while you preheat the oven so they have time to come to room temperature.
Doing so will help the s’more brownies rise properly in the oven and give them a better overall texture. Plus, it’s way easier to mix up the batter! - Marshmallows – I find that the mini variety melts more evenly, but you can use regular-sized ones if that’s all you have on hand. Measure out 4 cups total, then slice each one into quarters.
- Graham Cracker Sheets – Break these up into tiny pieces, being careful not to smash them into crumbs. If you do, just sprinkle those on top too!
- Chocolate – Hershey bars will create the classic flavor we all know and love, but you can use 2 cups of milk chocolate chips (divided) or 1 cup of milk chocolate chunks in this recipe for s’mores brownies instead.

Tips and Tricks to Make Perfect S’more Brownies
- Divide the Hershey bars between the batter and the topping.
You heard that right! We’re sinking two entire candy bars right into the batter! Break them up into individual segments and press them under the surface.
I like to use a toothpick to keep the batter off my finger — and not lose any from the pan.
Break the rest of the chocolate into smaller pieces (no bigger than your thumbnail) to scatter on top with the marshmallows and graham crackers.
- Broil just until the marshmallows are golden.
Keep a very close eye on your s more brownies because that topping can burn under the broiler in an instant!
If you have a butane torch — the kind used for crème brûlée — you can have better control over the browning step.
Keep the torch moving from side to side, never staying in one spot for too long, until the marshmallows get some color and start to bubble just a bit.
- Allow s’mores brownies to fully cool before slicing.
Let them sit in the pan for a few minutes, then lift them out by the parchment paper directly onto a cooling rack.
Cool there for at least 5 minutes (I usually wait 10) so everything has a chance to set. This will make slicing so much easier, and the topping won’t slide off the sides.

- 9×13 Baking Dish – This set is one of my favorites! It comes with a lid for easy storage and is great for casseroles too.
- Parchment Paper – Makes clean up (and slicing) a breeze!
- Microwave-Safe Bowl – You won’t lose a drop of melted butter when you mix the batter in the same bowl.
- Whisk – These have held up for over 10 years and are still as good as the day I bought them.
Flavor Variations
Get just as created with the s’mores brownie recipe as you would the campfire treat!
Swap the Hershey’s for chopped up Reese’s, peanut butter chips, or crushed cookies. Or, replace half of the chocolate pieces with caramel bits — you can even put caramel on the inside.
As far as serving goes, you can enjoy these s’mores brownies as is or with a scoop of vanilla ice cream. I wouldn’t say no to a drizzle of salted caramel either!
S’mores Brownie Recipe FAQ
Sure! You’ll likely need two boxes to make the right amount of batter if you want yours to be just as thick.
Because this recipe for s’mores brownies includes chocolate bars in the batter, avoid any that come with fudge or chocolate chips added to the mix.
Or, skip the chocolate in the batter and simply add the topping amounts to whatever boxed brownies you like!
Yes, but you will likely need to increase the cooking time by about 10 minutes to accommodate the thicker layer.
Start checking your s more brownies at the 20-minute mark to be safe, and keep a close eye on them so they aren’t overdone.
The marshmallow layer on top will be thicker as well, so be sure your pan is deep enough to hold everything, or simply reduce the toppings by half.
If you line the entire pan with parchment paper before adding the batter, you can lift the entire dessert out onto a cutting board!
Spray a large knife with nonstick spray, then press down through the s’more brownies in straight lines to create evenly sized pieces.
Or, run the knife under hot water and dry completely before slicing. The metal will retain the heat and glide through the layers like butter!
Storing S more Brownies
S’more brownies can be kept covered at room temperature for 2-3 days, longer if left uncut.
Avoid the refrigerator since the cool air will cause the dessert to dry out and become hard. Same goes for the freezer!

Ooey Gooey S’mores Brownies
Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1 tablespoon vanilla extract
- 3 large eggs, room temperature
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 6.2 ounces Hershey chocolate bars, 4 1.55 ounce bars, divided and broken into pieces
- 2 graham crackers sheets
- 2 cups mini marshmallows
Instructions
- Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper, set aside.
- Place butter in a large microwave-safe mixing bowl, melt completely. Add sugar, cocoa, vanilla, and eggs. Whisk to combine well. Add flour, baking powder, and salt. Whisk until completely combined, but do not over mix.
- Pour into the prepared baking dish. Press 24 sectioned pieces from the Hershey bars into the brownie batter. Each bar has 12 sections, you can place them in a 4×6 pattern to make them even in the pan. Press them into the batter with a spatula until they are covered. Bake for 20 minutes or until a toothpick comes out clean.
- In a medium mixing bowl, break the remaining chocolate bars and graham crackers into bite-size pieces, stir in the marshmallows.
- Once the brownies are cooked through, pour the marshmallow mixture over the top of the brownies and spread it evenly.
- Place the brownies under the broiler until the marshmallows are golden, about 30 to 60 seconds. Don’t walk away from the oven. While broiling your food can go from zero to burnt in seconds.
- Allow the brownies to cool on a cooling rack for 5-10 minutes. Spray a knife with nonstick pan spray to help prevent the blade from sticking.
