We call it Mexican Crack Chicken around here, and it’s so easy it almost cooks itself.
I’ve made this at least 30 times, and my family is still begging for it. My people are picky, too. There is always a container of this in our fridge, and it’s on my list to make again this week.
The sauce comes out thick and velvety because of one measurement, and it’s a lot smaller than you would think.

Grate your own instead. I use Monterey Jack because it melts smooth, plus a little Oaxaca or asadero for that stretch and some sharp cheddar for color. Freeze the block for ten minutes first and it’ll grate clean.
- Keep it on Low once the dairy goes in. Cream cheese sauces break when they get too hot, and the fat separates out and pools on top. Low holds it together.
- Sauce looser than you want it? Take the lid off and run it on High for fifteen minutes. It tightens right up.
I’ve made enough slow cooker chicken over the years to know that more liquid doesn’t mean more tender, and that’s the one that gets people.
Chicken breasts are roughly seventy percent water, and a good bit of that ends up in the crock by hour four. So if you start them swimming in broth, you’re fighting a watery sauce at the end.
Four ounces of stock is all this needs, and I know a half cup looks like nowhere near enough when you pour it. The tops of the chicken will even stay dry to the touch. Leave it alone anyway.
The chicken releases the rest on its own, and because there’s less water in there to begin with, the cream cheese actually has something to grab onto.

How to Serve Crockpot Mexican Chicken
One batch of Mexican crockpot chicken is the recipe I lean on when I want dinner handled five nights running.
- In a bowl with chips. No plate, no assembly, just scoop and go. This is how it disappears at our house.
- Over rice. White rice or our Restaurant Style Mexican Red Rice, then avocado, pico, red onion, and a hard squeeze of lime.
- Tacos. Warm tortillas and a little cilantro, four minutes start to finish. Crockpot Mexican chicken for tacos might be the best thing this recipe does.
