Homemade Costco Chicken Bake

Costco Chicken Bake is filled with diced chicken, smoky bacon crumbles, creamy Caesar dressing, and three types of melty cheeses to create a comfort food delight! You’ll get all of the classic flavors of the food court right in your kitchen with my homemade version. It’s the perfect easy weeknight dinner option!!

Costco Chicken Bake

I think we can all agree that perfectly cooked chicken paired with bacon and cheese, all wrapped in a golden-brown pizza dough is going to taste pretty amazing.

And paired with a tangy Caesar dressing, you really can’t go wrong!!

That’s what you’ll find in my Costco chicken bake. Inspired by one of my favorite frozen foods to pick up when doing my shopping, it’s almost like a Hot Pocket. But better. So, so much better!

It’s super easy to throw together too. 

Using shortcuts like cooked chicken, bacon, and pre-made dressing, and the option of using store-bought pizza dough too, you won’t have to worry about a lot of prep work!

Ingredient Notes and Substitutions

  • Pizza Dough – The base of our copycat Costco chicken bake! I like using my homemade 2 ingredient pizza dough to hold in all of the yummy fillings. 

    If you don’t have time to make it from scratch, store-bought dough works too!
  • Chicken – And make sure it’s cooked before getting started! Leftovers are a great option, or grab a rotisserie chicken from the store instead.
  • Bacon – Also needs to be cooked, and I recommend using thick-cut for extra texture. Baking bacon in the oven is my jam at the moment, or you can use the air fryer

    Once cooked, crumble it up before adding it to your Costco chicken bake recipe.
  • Shredded Cheese – I used a combination of mozzarella, provolone, and Parmesan, and you better believe I shred it myself! The pre-shredded bags have anti-caking agents and don’t melt as well.

    Cheddar, Monterey Jack, or Gruyère are other options to try!
  • Creamy Caesar Dressing – Key to getting Costco’s signature flavor! It also adds a touch of tangy, garlicky creaminess that pairs super well with the other ingredients.

Ranch dressing or garlic aioli will give a slightly different flavor but are the best subs.

  • Egg – For the egg wash. I swear it gives the best golden and glossy finish!
  • Green Onion – Adds a pop of color and mild onion flavor without totally overpowering the rest of the bake. Chives would also be good!

Tips and Tricks to Make the Perfect Costco Chicken Bake Recipe

  • Use room temperature dough for easier rolling.

Cold dough is tough to stretch (trust me!) and has a tendency to shrink back when rolled. 

Let it sit at room temperature for about 30 minutes before working with it to make rolling it a lot easier — and prevent it from tearing!

And if your room temp dough still doesn’t want to roll out, let it rest for about 5 minutes then try again.

  • Chop evenly for the best bite.

When prepping the cooked chicken and bacon, try your best to chop them into similarly sized pieces. 

This ensures that every bite has the perfect mix of chicken, bacon, cheese, and dressing. 

  • Don’t overfill the dough!

My chicken bake Costco recipe is definitely loaded with fillings, but it’s not overloaded to the point of major leakage. 

I know it’s tempting to pack in as much yummy goodness as possible, but do your best to stick to the proportions I laid out on the recipe card. 

Too much filling can cause the dough to tear. Leave that 1-inch border I noted as well to make rolling and sealing easier!

  • Pinch the seam to seal before baking.

After rolling each Costco chicken bake, pinch the seams and ends tightly to keep the fillings from oozing out in the oven. 

You can even add a little water before pinching to help them stick better.

I also place them seam-side down on the baking sheet to help keep everything together.

Serving Suggestions 

We are a sauce family, so I pull out all of our favorite dipping sauces whenever I make my Costco chicken bake recipe! 

Chad and Munchkin never say no to my Oven Baked Garlic Fries, or sometimes I keep things lighter and pair the bake with a big garden salad and roasted veggies like Brussels or broccoli

You can also feel free to switch up — or add to! — the fillings. A few of my favorites to try are sautéed mushrooms, caramelized onions, and roasted red peppers.

Storing and Reheating

If you’d like to get ahead on dinner prep, the filling mixture can be prepped up to 24 hours in advance and stored in the fridge!

Store leftover copycat Costco chicken bake in an airtight container in the refrigerator for up to 3 days, or wrapped in foil in the freezer for up to 2 months. 

Reheat in the oven at 350°F for 10-12 minutes until warmed through. When reheating from frozen I usually add an extra 10-15 minutes and cover with foil for the first 15 to prevent burning.

Chicken Bake Costco Recipe FAQ

What’s the best way to roll out pizza dough evenly?

I sprinkle some flour on my (clean) countertop, then roll each piece of dough into a rectangle to ensure even cooking.

Remember, if the dough doesn’t roll out easily, let it rest for a few minutes before stretching it again. You’ll get there at some point!

What sauce is in Costco chicken bake?

Classic creamy Caesar! That’s why I chose it for this chicken bake Costco recipe. That said, you could always try my substitution options I listed above for a different flavor!

Can I freeze homemade chicken bakes?

Absolutely! While you can certainly freeze leftovers, I know busy parents may want to make these ahead for meal prep.

Assemble and roll the bakes, then flash freeze them (unbaked) on a baking sheet until solid. Transfer to a freezer bag and store for up to 3 months. 

To bake from frozen, cook at 375°F for 30-35 minutes or until golden brown.

Ingredients
 

  • 1 pound pizza dough, room temperature
  • 1/2 cup creamy Caesar dressing
  • 2 cups diced cooked chicken
  • 1 cup cooked, crumbled bacon
  • 1/2 cup sliced green onions, about 4–5 onions
  • 4 ounces shredded mozzarella cheese, about 1 cup
  • 4 ounces shredded provolone cheese, about 1 cup
  • 4 ounces shredded parmesan cheese, about 1 cup, divided
  • 1 large egg, beaten

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F. Line a 13 x 18-inch baking sheet with parchment paper.
  • Make the Filling: In a large mixing bowl, combine the diced chicken, crumbled bacon, sliced green onions, Caesar dressing, mozzarella cheese, provolone cheese, and 1/2 cup of the shredded parmesan cheese. Mix well until all ingredients are evenly coated.
  • Prepare the Dough: Lightly flour a work surface and divide the pizza dough into 4 equal pieces. Roll each piece into a 6 x 8-inch rectangle, ensuring the dough is not too thin to prevent tearing.
  • Fill & Roll: Evenly spread 1/4 of the filling mixture over each piece of rolled-out dough, leaving a 1-inch border around the edges. Starting from one of the longer sides, carefully roll each piece into a log, enclosing the filling. Pinch the edges and seams tightly to seal.
  • Egg Wash & Topping: Place each rolled log seam-side down on the prepared baking sheet. Brush the surface of each roll with beaten egg. Sprinkle the remaining 1/2 cup of shredded parmesan cheese evenly over the tops.
  • Bake: Bake in the preheated oven for 20–25 minutes, or until the dough is golden brown and the cheese is melted.
  • Cool & Serve: Let the chicken bakes cool for a few minutes before serving. Enjoy!

Make-Ahead Tips: The filling mixture can be prepped up to 24 hours in advance and stored in the refrigerator. Pizza dough is easiest to roll at room temperature, so let it sit out for 15–20 minutes before rolling.
Storage: Store leftover chicken bakes in an airtight container in the refrigerator for up to 3 days. Let them cool completely before storing to prevent condensation.
Freezing: Wrap cooled chicken bakes individually in plastic wrap or aluminum foil, then place them in a freezer-safe bag. Freeze for up to 2 months.
Reheating: From Refrigerated: Bake at 350°F for 10–12 minutes until warmed through. From Frozen: Bake at 350°F (175°C) for 20–25 minutes, covering with foil for the first 10 minutes to prevent over-browning.
Dough Rolling Tip: If the dough springs back while rolling, let it rest for 5 minutes, then try again.
