My 3 year old is as fickle as little girls come. One day she loves loves loves lemon and I make a batch of our favorite Raspberry Lemonade Popsicles. The next day she says, “Mommy, I don’t like lemon”. Fine, what would you like? Blueberry Vanilla Yogurt Popsicles? Oh yes, mommy! OK. After one… “Mama, I prefer strawberry”. Seriously? I can’t imagine how she became so fickle. Oh, wait. Maybe I know someone like that.
I offer her popsicles as a fun and healthy treat for snack time. Not to mention it is so easy to grab one and hand it to her while I am working, rather than preparing a healthy snack like fruit and yogurt. Well, needless to say with her ever changing tastes, I am always looking for new ideas to create healthy snacks. Last week at the end of our shopping week, we had ripe strawberries and limes remaining. SCORE!
The flavor combination is fantastic. It is refreshing with the perfect sweetness. And… Its a healthy treat packed with antioxidants.

MACERATE STRAWBERRIES: Place 8 ounces halved strawberries in a large bowl and drizzle with 1 tablespoon honey. Let sit for 5 to 10 minutes until the strawberries release some juice.
BLEND STRAWBERRIES: Transfer the strawberries and their juices to a blender and blend until smooth.
MIX BASE: Pour the strawberry puree back into the bowl. Add 1 cup plain yogurt and ยผ cup lime juice. Stir until fully combined and smooth.
FILL MOLDS: Pour the mixture evenly into popsicle molds, leaving about ยผ inch space at the top.
INSERT STICKS: Cover the molds with lids or aluminum foil and insert popsicle sticks.
FREEZE: Freeze for at least 4 hours, or until fully firm.
SERVE: Run warm water over the outside of the molds for about 10 seconds to release the popsicles. Serve immediately.

Make-Ahead: These popsicles can be made several days ahead and stored in the freezer until ready to serve.Storage: Store popsicles in resealable sandwich bags, then place in a gallon-size freezer bag for up to 2 weeks.Freezing Tip: If popsicles stick, run warm water over the molds briefly to release.Ingredient Tip: Fresh lime juice adds a bright, tangy flavor that balances the sweetness of the strawberries and honey.
