Beer, Bacon, and Cheese are pretty much my culinary trifecta! With that said; Beer Bacon Mac and Cheese is the ultimate comfort food. This restaurant quality recipe goes from prep to plate in just 25 minutes and will certainly make the Mac and Cheese Hall of Fame. I dare you to try and eat just one bowl.
This super cheesy mac and cheese starts with thick cut bacon cooked in a skillet and a magical cheese sauce is created out of the bacon drippings. Your favorite beer is cooked right into the mixture and a mixture of smoky spices are added in. The cooked beer imparts a very distinctive taste that you can not get with any other ingredient. These flavors result in a restaurant quality mac and cheese unlike anything that you have had before. It's ready in less than half an hour.

A potato lover's dream come true. Bacon Cheddar Hasselback Potatoes are loaded with bacon and cheddar in an unusual baked potato, you are going to love this recipe.
I can't believe its November. The summer is long gone even in the desert. Time for baking, roasting and everything in between that will warm up the kitchen. During the fall potatoes are a frequent inhabitant in my oven. This recipe is one of my favorites!

It is the cool season around here. We are dipping in the 70's in Arizona and that means SOUP! I have to tell you we have made a ton of soup already and I do not see any stopping in the near future. So keep your eyes peeled we have a new soup planned each week throughout the cool season and they will knock your socks off.
One of our new soups this season has kind of gone crazy around here. The Bacon Cheddar Beer Cheese Soup with Chicken has over 23,000 Pins and is already our #2 all time recipe on the site and it was just posted 4 weeks ago. We have had such a fantastic response to the recipe with rave reviews all over Facebook and our site. We have even eaten it a gazillion times so I decided to mix it up a bit.

When you break it all down I am a simple gal. I like to make things from scratch, but in the end some days, convenience is king! I have been a long time lover of sandwiches and truly enjoy dressing them up. Now don't get me wrong the PB&J that my daughter enjoys more times that I could handle is not what I mean by sandwich lover.
I enjoy meat packed sandwiches that have cheese and scrumptious sauce dripping from them. I love a nice grilled crusty exterior and did I mention cheese? That is a sandwich that you can call a meal!

No worries though, there was no lack of fabulous food. I couldn't believe all the crazy smokin' my brother in law did on the grill. Smoked ribs, pork roast, chicken... Oh my. Then as if that wasn't enough, he prepared these crazy cheesy potatoes. They were sooooo good. I swear I had two plates full. He also made a baked macaroni casserole that I am freaking out over, but I will get to that in a few weeks.
Well apparently aside from being taken in by all the meat, Chad was in so awe of this potato bake that he made. As soon as we got home he started asking about the potato bake. Well, I decided to take matters into my own hands.

Bacon Lovers Chicken Alfredo with Fettuccine and Broccoli takes your standard chicken alfredo to a whole new level. Packed with bacon, alfredo sauce, chicken and broccoli this dish is out of this world. Truly a taste of something you would order at a fine Italian restaurant without the hefty price tag and in the comfort of your own home.

Check out our new beer cheese soup: Bacon Double Cheeseburger Beer Cheese Soup
Sometimes I am brilliant on the fly. You know what I mean, you are rushed for dinner and you start pulling things out of your fridge and pantry and create the most spectacular dinner ever. Other nights you get stuck in one mindset. OK, I have chicken and need to make soup. Hmmm.... Chicken noodle soup. Luckily this week Chad was incredibly inspiring.
I told him I needed a soup made with chicken. We threw some ideas around and then he said: bacon, chicken cheese. OH YAY! I got that.

Are you looking for the perfect side dish? I have been dreaming of a side dish so insanely divine that I would need to build a meal around it. Loaded with bacon, beer and cheese I am pretty sure this is it!!! Even though I am not a big beer drinker (I would much rather sip on one of our Classic Margaritas) I really love the flavor beer gives to a dish when cooked with it.

The fantastic Hasselback Potato was all the rage last year, but needless to say... I am not real trendy. Shocking, I know! Seriously though, I am more of a classic girl. I am not what you call hip. But, I am really good with that. The trends come and go, classics... We are here to stay. So, what does this have to do with our lovely potato you ask?
As I was saying, I am not trendy. I kind of march to the beat of my own drummer. So Hassel-who potatoes? Exactly! Then, last month I needed the perfect side to go with my Bacon Bourbon Barbecue Chicken Kabobs; a potato that I could stuff with mounds of butter, cheese and bacon. Although I am very fond of the Italian Potato Skins I made last year, and yes they would be an appropriate carrying vessel, I have made a lot of potato skins. I wanted something different. I immediately remembered those accordion-like potatoes I saw everywhere last year.

Is it possible for perfection to arise out of the serious need for simplicity? We think it is. When there is no time for an inferior burger, only the best will do. Pull out your favorite flavors from your spice arsenal and get to work.

Happy Friday, I am so grateful the weekend is here. Big plans for the weekend, food, family, friends and football!
I am not much of a football fan, but when the Giant's are playing that all changes. In 2008 Mr W was rooting for the Patriots and I was cheering on the Giant's, well we know how that played out. GO NEW YORK!

Happy Wednesday and welcome to The Happy Hour here at The Slow Roasted Italian. Today we are featuring Parmesan Bacon Crackers. We served these at our Christmas party this year and they were a huge hit. My family loves these, as a matter of fact my 2 year old daughter asks for them and devours them. We all love them, we hope you do too!!!

Well again, here we are on the lighter side of cooking. After a fun spring of baking my heart out, I am ready to lighten things up a bit. I decided to start with a regular in my kitchen, chicken. I love chicken and am always looking for ways to dress it up. I have been experimenting with lighter flavorful versions of Chicken Cordon Bleu. The winning dish above is served with Spicy Baked Brown Rice.
