Ingredients Notes and Substitutions

  • Oreos – Use your favorite! Regular, Double Stuf, and even seasonal colors or specialty flavors.

    It’s such an easy way to truly make this ice cream sandwich cake recipe your own.
  • Ice Cream Sandwiches – Mini sandwiches are easier to work with. I got the Hood brand ones that are 2×2 inches, and they fit in the pan perfectly.

    You could also use full sized ones and cut them in half if needed. Try different flavors here too — maybe Neopolitan?
  • Cool Whip – You’ll need this to be soft and spreadable, so thaw it in the refrigerator for at least 6 hours before assembling your ice cream sandwich cake.
  • Toppings – Sky’s the limit! Add more full-size cookies, crush them into smaller pieces, or grab a bag of minis. Your favorite chocolate candy would be delish too.

How To Make An Ice Cream Cake with Ice Cream Sandwiches

Layer everything together and freeze until firm. It doesn’t get much easier than that!

I wanted to keep this ice cream sandwich cake recipe as simple as possible — no one wants extra work (or dishes!) when it’s hot outside.

However, you can create a cookie crust instead of using whole Oreos as the base.

Do so by increasing the cookie count to 30 and crushing them in a food processor with 4 tablespoons of melted butter.

Press the mixture into the bottom of the pan, then continue with the recipe as directed.

Tips and Tricks for the Best Oreo Ice Cream Sandwich Cake

  • Make sure your pan is deep enough.

We’re talking casserole dish depth here, not the typical cake pan! As long as it’s at least 3 inches deep, everything should fit.

  • Don’t skip the parchment!

Not only does it make cleanup easier, but you can lift the entire dessert out of the pan when it’s time to slice.

  • Swap the cookies for candy.

Instead of more Oreos on top of this Oreo ice cream cake, try chopped up Reeses or Andes mints.

M&Ms or peanuts would be a great way to include some extra crunch in your ice cream sandwich cake.

  • Add a little drizzle.

You can’t go wrong with chocolate syrup or my no-fail caramel sauce. For a fruity twist, try homemade strawberry syrup instead!

  • A sturdy Silicone Spatula can be used for scraping, stirring, and smoothing and is easy to clean too!

Storing Leftover Ice Cream Sandwich Cake

Wrap the whole pan tightly with aluminum foil or transfer Oreo ice cream sandwich cake to an airtight container using the parchment paper.

Store in the freezer for up to 7 days so it doesn’t melt. Note that the cookie layers will soften the longer the Oreo ice cream cake sits.

Mint is the first one that comes to mind, and it would be extra refreshing on a hot day!

Swap the regular cookies for mint flavored ones, then add a drop or two of peppermint extract to the whipped topping.

Birthday Oreos pair well with colorful sprinkles, while the Golden variety complements fruit flavors without being overwhelming.

Do I need to soften the ice cream sandwiches before assembling the cake?

No, and please don’t! Keep them in the freezer until just before you unwrap them so your Oreo ice cream cake stays level.

If some spots soften and refreeze, then the dessert might crack or collapse.

What’s the best way to slice ice cream cake with ice cream sandwiches?

The best way to cut through any frozen dessert is with a large, sharp knife that’s been run under hot water. Dry it thoroughly before slicing, though!

Since metal retains heat, the blade will glide through each layer quickly and easily with little mess. Wipe it clean between slices as needed.

Ingredients
 

  • 20 Oreos, plus more for topping
  • 8 ounce Cool Whip, thawed and divided
  • 16 mini ice cream sandwiches
  • chocolate syrup, optional topping
  • Mini M&M’s, optional topping

Instructions
 

  • Line a 8×8-inch baking dish with parchment paper.
  • Line the bottom of the parchment with Oreos, breaking them in half to fill any gaps.
  • Spread one 8oz. Container of thawed cool whip over the top of the Oreos.
  • Layer the sandwiches on top of the cool whip.
  • Spread the other container of thawed cool whip over the top of the sandwiches.
  • Top with crushed Oreos and other candy if desired.
  • Freeze for at least 4 hours before slicing and serving.
  • Drizzle with chocolate syrup and sprinkles just before serving.
