Some days I am just plain lazy in the kitchen. One bowl, one pan, and 5 minutes to get it in the oven is about all I have.
In comes the Lazy Day Brownie. Perfectly chocolaty and it comes together in 5 minutes.
I love this recipe as a base for yummy trifles and really enjoy souping these brownies up to make several varieties of outrageous brownies.
These are certainly the most requested recipe in our house. I cut this recipe into tiny brownie bites and stick them in the freezer.
They are the perfect cure for that chocolate craving when ever you have one! Also awesome for stirring into vanilla ice cream.

Lazy Day Brownies
Lazy Day Brownies are a perfectly chocolaty, moist and delicious recipe. 1 bowl and 25 minutes until you can dive into this fabulous treat!
prep time: 5 minscook time: 20 minstotal time: 25 mins
Ingredients
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 tablespoon vanilla extract
- 2 large eggs
- 1/2 cup all purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper, set aside.
- Place butter in a large microwave safe mixing bowl, melt completely.
- Add sugar, cocoa, vanilla and eggs. Whisk to combine well. Add remaining ingredients
- Whisk until completely combined, but do not over mix.
- Pour into prepared baking dish.
- Bake for 20 minutes or until a tooth pick comes out clean. Allow to cool completely before cutting.
- Enjoy!

i love these brownies. they always turn out great. but have one question..... do we measure the cocoa first and then sift it or sift first and then measure? since cocoa has lumps
ReplyDeleteI measure first and then pour the measuring cup into a sifter (if necessary) and sift right into the bowl. Enjoy and let us know how it goes.

Why do you have a separate recipe for brownies WITH nuts? can't you just add nuts to this recipe.??? or is there a specific REASON you have NOT? thanks for the reply
ReplyDeleteI subsitituted the butter gor vegetable oil as it tends to be softer, delicious!
ReplyDeleteJust made .. and these are good, quick and easy! I added 1/4 cup chopped walnuts and then sprinkled 1 tbs of mini choc chips on top. After trying paleo, vegan, low cal brownies .. these were a welcome change - and the only recipe that I didn't toss!!

I doubled the recipe and used half butter and half veg. oil. took 35 minutes to bake.
ReplyDeleteI normally always forget to comment about a recipe, or to let people know how their recipes worked, but OH MY GOD! These brownies are so fast to whip up, and you don't have to worry about beating it to keep it fluffy because you want them as dense as possible. Absolutely LOVED this recipe, and these brownies were a hit at my party yesterday! =) Thank you so much!

DeleteJust making these now... I didn't have any cocoa powder so I used an equal amount of melted chocolate chips. It makes the baking time double, but they turn out so, so gooey delicious .
ReplyDeleteJust made these brownies, really disappointed. Not moist at all, soooo dry. I baked them for 18-20 minutes. I used organic cocoa powder, so maybe it was that☹️
