Perfectly Frozen Basil Lemonade
Temperatures have been heating up here in the valley of the sun. After an afternoon working in the garden, all I want is a very refreshing drink. I was just lucky enough to purchase a case of fabulous lemons from our co-op and they have been calling to me. I have such a lemon 'thing'. I am on a kick. With a garden full of 4 varieties of basil flourishing I thought "what a fantastic drink this is going to be" as I was hand selecting my 'sweet basil' leaves (this is my first recipe using my fresh garden ingredients, of course they had to be perfect). So, I got started. You know the secret to the perfect lemonade is not using sugar, but making a simple syrup. What could be better than a summer day with Perfectly Frozen Basil Lemonade? Perfectly Frozen Basil Lemonade serves 4
5 cups ice cubes
1-2 cups fresh lemon juice
1/2 cup sugar
1/2 cup water
1 cup fresh basil leaves, washed (plus extra for garnish)
To create basil simple syrup: In a small sauce pan over medium-high heat combine sugar, water and basil leaves. Bring to a boil and cook until sugar is dissolved. Remove from heat and allow to cool to room temperature (about 30 minutes). Strain basil leaves and place basil simple syrup in a mason jar.
In a blender combine ice, lemon juice (start with 1 cup and adjust to taste) and basil simple syrup. Blend until fine consistency is reached. Serve in a glass garnished with basil leaves.
