Scrumptious Strawberry Banana Popsicle Recipe

Made with fresh fruit and simple ingredients, you’ll feel good about giving these to your kiddos — or snacking on them yourself. The hardest part is waiting for them to freeze!!

Strawberry Banana Popsicle

Nothing says summer quite like a luscious fruit popsicle on a warm summer day. I love to watch Munchkin devour these… it makes me think of summers when I was a kid. 

Bomb pop in one hand, running in the backyard and playing by the water. Right arm dripping in red, white, and blue. How much fun was that? 

I can’t say that I have had the enjoyment of watching Munchkin dripping in ice pops as she devours them too quickly. But with temps of 110 and climbing here in the valley of the sun, I’m sure it won’t be long!

These scrumptious strawberry banana popsicles are there and gone in an instant. So delicious! 

Vibrant, sweet, and tart strawberries wake up your taste buds and carry you into the surprisingly more mellow and tender banana yogurt layer, then round it out with the mouthwatering strawberry again.

Plus, these strawberry banana ice pops are such a fun way to use up ripe bananas instead of the usual banana bread — especially when it’s so hot outside. If I can avoid turning on the oven in the summer, you know I will!

Ingredient Notes and Substitutions

  • Fresh Strawberries – In a pinch, you can thaw frozen strawberries and use those instead. The texture will be a bit different, but you’ll be able to make strawberry banana pops all year round!

    The weight of frozen strawberries will be the same as fresh, so measure them out before thawing.
  • Bananas – The riper they are, the sweeter they’ll be! The peels should be covered in ‘freckles’ but the banana should still be a bit firm. Avoid any that are mushy or covered in large, dark patches.
  • Plain Yogurt – I typically have non-fat yogurt in the fridge, but you can easily use full fat in this recipe.

    Greek yogurt is a great way to add some protein too, though that layer will be a bit thicker. Or, grab a dairy-free yogurt to make these dairy-free and vegan!
  • Sugar – Just a touch to make these strawberry banana popsicles even sweeter. Feel free to use a sugar substitute or even honey if you’d like.
  • Lemon Juice – Adds a little bit of tartness to balance the sweet flavors!
  • Vanilla Extract – Brings out the fruit flavors and helps sweeten the bananas even more.

Tips and Tricks to Make Perfect Strawberry Banana Popsicles

  • Clean and hull the strawberries first.

Most strawberries shouldn’t need more than a quick rinse in cool water. If I have the time, I’ll do a quick soak in water with a little bit of vinegar first.

Be sure to rinse them after the soak too! Drain them well and pat dry with paper towels or a clean kitchen cloth.

Then, hull the berries (remove the pith in the center and the leaves on top) to save as much of the fruit as possible. Every little bit counts!

  • Taste the fruit mixtures before freezing.

You may need to add a little more sugar to one or both of the strawberry banana popsicle mixtures if the fruit isn’t ripe enough.

If the banana mixture tastes too bland, add more vanilla. And if the berry mixture is too sweet, add a little more lemon juice.

  • Freeze in between flavors for even more defined layers!

I haven’t had too much of an issue with layers blending together — and I don’t always have the time to babysit my strawberry banana ice pops!

But freezing in stages is especially helpful if you decide to use Greek yogurt for the middle layer.

Because it’s thicker and denser, it’s more likely to sink a bit into the strawberry layer on the bottom of the ice pop mold.

You can wait until each layer is frozen solid, or just long enough to be lightly set (about 30 minutes). Keep the fruit mixtures in the refrigerator while you wait to pour them in!

Prep Ahead

  • Clean and hull strawberries
  • Juice lemon

Kitchen Tools You Will Need

  • Food Processor or Blender to blend the strawberry layer.
  • Mixing Bowls – I like to have a variety of sizes on hand, and this set has them all.
  • Citrus Juicer – This gets every last drop out, which makes juicing lemons so much easier.
  • Ice Pop Mold – Silicone molds are ideal! This one comes with reusable sticks too.

Mix-In Ideas

There are so many ways to make this strawberry banana popsicle recipe your own, whether you want to try a different flavor or use up what’s in your fridge!

Swap in coconut yogurt for a tropical twist, and toss some shredded coconut into the bowl while you’re at it.

Or, include raspberries and blueberries in the outer layers for a mixed berry flavor.

Don’t want to deal with the layers? Toss everything in the blender together! Pour slowly into the molds, then give them a quick tap on the counter to avoid air bubbles.

Storing Strawberry Banana Ice Pops

Once your popsicles are completely frozen — start checking after 4 hours — remove them from the molds and wrap each one in a piece of parchment.

I usually just wait until the next day to be sure they’re solid all the way through.

Place your banana strawberry popsicles in a zip-top freezer bag and enjoy within 1-2 months for the best taste and texture.

Banana Strawberry Popsicles FAQ

How do you keep homemade popsicles from sticking to the molds?

Silicone molds are far less likely to stick, though there are some tricks if all you have is plastic!

First, pop the molds in the freezer while you work on the ice pop layers. Then once your frozen treats are solid, run the molds under warm water just until the popsicles loosen and slide out.

Can I make these without molds?

You bet! Grab some 3-ounce plastic cups and fill with the strawberry banana popsicle layers as directed.

Cover the tops with aluminum foil, cut a slit in the middle, and stick a popsicle stick through. Then, pop them in the freezer!

I call these ‘cupsicles’ — they’re the perfect size for Munchkin, and Chad and I love them too.

How many cups are in a pound of strawberries?

You’ll get about 3 to 3 ½ cups of whole strawberries per pound, depending on how large they are.

There’s no need to measure when making these banana strawberry popsicles — just go by weight!

If you’re using a big bag of frozen berries, best to measure with your kitchen scale before thawing to get just the right amount.

Ingredients
 

  • 2 pounds ripe strawberries, washed and hulled
  • 3 tablespoons sugar, divided
  • 2 tablespoons lemon juice
  • 3 medium ripe bananas, mashed
  • 1 cup non-fat plain yogurt
  • 1 teaspoon vanilla extract

Instructions
 

  • Combine strawberries, 2 tablespoons sugar and lemon juice in a blender. Blend until smooth. Divide half of the strawberry mixture between your popsicle molds (about 2 tablespoons each). Set aside.
  • In a small bowl combine bananas, yogurt, 1 tablespoon sugar and vanilla. Stir to combine.
  • Add banana mixture to popsicles, filling molds about 2/3 full.
  • Pour remaining strawberry mixture on top. Freeze 4-24 hours until completely frozen. I freeze for 24 hours. Remove from molds, serve and enjoy!

    1. Thank you so much Tricia! I buy the 3 ounce plastic cups at Wal-mart too. Cover with aluminum foil (cut a small slit in top) and stick a craft stick in it.

      I call them 'cupsicles'. Perfect munchkin size and Chad and I love them too!

    1. That is exactly why I started making my own. I was in the grocery store reading labels and I was like really all that in a frozen ice pop. Nah! I can do better, and here we are.
