Helpful Tips to make One-Pot Cheesy Italian Pasta and Chicken:
- Dried Italian Seasoning is a fabulous convenience ingredient. If you do not keep it on hand, combine 1 teaspoon dried basil, 1 teaspoon rosemary, 1/2 teaspoon oregano and 1/2 teaspoon dried thyme.
- This dish is just spicy enough to make your tongue tingle. For a very mild sauce, reduce the red pepper flakes to 1/2 teaspoon.
- I know some people are sensitive to alcohol. The wine adds a fabulous rich buttery flavor and a bright citrusiness to the pasta. If you can use the chardonnay, I highly recommend it. However, you can substitute with chicken stock, white grape juice, or lemon water (1/2 cup fresh lemon juice and 1/2 cup water).
What you will need to make One-Pot Cheesy Italian Pasta and Chicken:
- 4 Quart Braising Pan - this is my favorite for my one pot wonders. The spaghetti fits inside so you can put the lid on.
- Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

One-Pot Cheesy Italian Pasta and Chicken
One-Pot Cheese Italian Pasta and Chicken is a rich and savory dish bursting with your favorite flavors! This simple recipe features a creamy sun-dried tomato sauce that is cooked right into the pasta in this amazing one-pot dish. Toss it all in a pot and let it cook. It's so easy that it just about cooks itself. Now that's my kind of meal!!!
Ingredients
- 8 ounces baby spinach leaves, divided
- 1 cup sun-dried tomatoes packed in oil and Italian herbs, drained (about 7 ounces)
- 1 large yellow onion, sliced
- 1 pound uncooked boneless, skinless chicken breasts (cut into 1/2" bite size pieces)
- 6 garlic cloves, sliced
- 1 pound dry linguine
- 2 teaspoons dried Italian seasoning
- 2 teaspoons kosher salt
- 1 teaspoon fresh ground pepper
- 1 teaspoon crushed red pepper flakes
- 4 cups (32 ounces) reduced sodium chicken stock
- 1 cup (8 ounces) chardonnay wine
- 4 ounces fresh Parmesan cheese, shredded
Instructions
- Combine 1/2 of the spinach with the tomatoes, onion, chicken, garlic, linguine, Italian seasoning, salt, pepper and crushed red pepper in a 5-quart Dutch oven over medium-high heat. Pour chicken stock and wine over top. Cover and bring to a boil.
- Cook 7-9 minutes until pasta is al dente (with a bite to it). Toss pasta with tongs occasionally to keep the pasta from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking. This is going to make the base for our delicious cheese sauce.
- Turn off the heat and add the cheese to the pasta. Toss pasta with tongs until the cheese melts into the pasta. Toss in remaining spinach.
- Serve and enjoy!

DeleteI had another recipe that called for white wine and was told to substitute "white wine vinegar" it turned out great so I'm sure you could also substitute it in this recipe...

DeleteI did not have enough broth so I used cream of chicken soup, very tasty.
DeleteI did not use dried tomatoes but a can of tomatoes roasted with basil and sauce 15 oz can. And cream of chicken soup with wine and also chicken broth too. So tasty.
DeleteI substituted 1cup of white wine vinegar and it unfortunately overpowered the dish, making it really acidic. I love the dish otherwise, but will at least half the vinegar next time.

DeleteMany people can not use wine and must substitute. Chicken broth is an excellent substitution for white wine.
DeleteYou can purchase Dealcholized wine. It is so much better than cooking wine and much less salty. "Fre" makes a good alcohol removed wine, both red and white. You can purchase it at Wegmans. Many grocery stores now carry it.

DeleteWe used boneless, skinless thighs--I do not like white meat. I think that you might find boneless, skinless, white meat in prepared in 1/2" pieces so you have no prep--I was pleased that our grocery store had boneless, skinless dark meat but we still had to carve the chicken into the pieces.
We should have bought the pre-chopped onions that are available in produce. It would have saved a short bit of time. We used one yellow onion as the recipe specified.
I used garlic from a jar, which saved prep time. So sue me....it saved time.
That was all the prep work that it took and it was very quick (like 10 minutes).
My mother doesn't like heat, so I only added a dash of the red pepper flakes. This was not my preference, because I like things spicier. But a dash did give it a nice little kick.
The jar of sun dried tomatoes we purchased, weren't cut. They were large tomatoes. I'd suggest cutting these in half before you put them in the pot.
Next time I make this I'd like to try it with three Italian cheeses sprinkled over the top of each plate. The parmesan that was in the dish was fabulous. But I love cheese. I'd like to see what those other flavors would do. I might even try it with a little mushroom.
But it is perfect as it it.
This is a perfect recipe. It took us at most 30 minutes from prep to finish. You only have one dish to clean, the pot that you dump everything and cook in, and a few prep utensil. I cannot wait to make this again! One of the best and easiest recipes I've ever made.
I really dislike drinking white wine but I keep vermouth on hand, so I used vermouth in this and it worked out great.
DeleteMark Gaulding, I agree mincing garlic is time consuming, so I use a garlic press. I love the fresh garlic, jarred garlic isn't fresh. And I never can tell in the finished dish the difference between minced and crushed.

DeleteHi! Could I substitute a different pasta such as penne or rigatoni? I prefer the bitesized pastas because I always end up with sauce all over myself using the string noodles!!! :)
ReplyDeleteAbsolutely. You can use any pasta in this recipe. Just make sure it is covered by the liquid enough to cook and then cook until al dente. Enjoy and let me know how it goes.

DeleteAbsolutely gorgeous recipe. Made it tonight. I had no parmesan so i used mature white cheddar, I'm not a fan of sundried tomatoes so I put in fresh cherry tomatoes. And bacon just because it's bacon. Kids loved it.

DeleteI did crock pot ~ it worked but I cooked on slow but for only 4-6 hrs long...and I did the cheese at the end, several times before serving good and cheesey(added Asiago cheese also) Plus I did a Chili version with white bean and chicken with Macaroni noodles (chili mac) delish. ReplyDeleteYou can even do a version of this adding (on top of this original recipe EXCEPT minus the chicken.....) a bottle of clam juice, one cup of white wine and then put in some uncooked jumbo shrimp and 1 cup of fat free Half & Half and some lemon juice (to make it even creamier) the last 10 mins of cooking time..

ReplyDeleteHi keri i made it for my little girl and myself at the weekend. Shes allergic to wheat soya and dairy. I substituted everything for free from things. Im uk based and i used violife parmesan. I also substituted the wine for water. At the cheese adding stage there was not much liquid left just enough to create steam to wilt the spinach and melt the cheese. Hope this helps

DeleteIt did cook all the way through, actually I felt like it was over cooked. I cut mine into chunks. Browning it and adding it later would have been better, but it defeats the purpose of a one pot dish 😊

DeleteI made this tonight, and it was delicious. I think the only thing I might change is to cook the chicken separately, and add it with all the spinach at the very end. I didn't like the spinach that cooked with the pot. Stirring it in at the end wilts it perfectly. Thank you for this recipe! I can see it becoming a stand by here.

ReplyDeleteReally great, but was really glad I sauteed the onion until translucent before adding the other ingredients and chicken broth. Otherwise I don't think it would have passed the picky palates of my kids, they both refuse to eat onions with any kind of crunch/bite left to them.

ReplyDeleteI had no wine, spinach, chicken or sun dried tomatoes, so I used pork scalloppini strips and a 14 oz. can of Italian diced tomatoe, 2 cups of bell pepper strips and lemon water. Turned out ery tasty. Will try the original recipe once I get all the required ingredients for it.

ReplyDeleteI made this tonight and it was (by no fault of the recipe's) a fiasco! My new onion from the store was rotten inside, then my new jar of crushed red pepper didn't have the sprinkle lid on tight enough so I dumped about 1/2 cup of red pepper in the dish. I did my best to scoop it out, but I had already lightly browned my chicken and added all of the other spices, so it was quite hot for my fingertips at that point. I tried to dilute the dish by adding 2 28oz cans of crushed tomatoes, but it was still WAY too spicy for my kids. My husband loved it though! Spicy is right up his alley. :)

This is awesome! People shouldn't be afraid of the cost of the sundried tomatoes--they are great in here, and the recipe is big--I had two helpings and saved six more. I wouldn't be afraid to increase the chicken (why did I measure it, why was I so silly?) This will be in my favorites file! And good for when I have a bunch around! Thank you!

ReplyDeleteWonderful recipe, thank you!! I increased the chilli flakes as my husband and I love chilli, I increased the parmesan as everyone knows you can never have too much cheese! Next time I will reduce the amount of salt. This will become a real go to for us from now on. Wonderful for leftovers for lunch for the rest of the week too!!! WINNING!!!!! :-D

Also has anyone substituted the sun-dried tomatoes with sun-dried tomatoe PESTO? I did and it was great! I thank you for giving a great recipe where the possibilities are endless!

ReplyDeleteI just made this dish. Yummy! It was fantastic. I panicked a little when it didn't appear there was enough liquid to boil the pasta. I added a little bit more chicken stock but it probably wasn't necessary. I also reduced the red pepper to approximately 1/2 teaspoon and would consider 1/4 teaspoon the next time. I guess I am a spice wimp! Thank you for this easy and really good dish!

ReplyDeleteI made one batch exactly to the publish recipe. Turned out great but the noodles tasted much too strongly of the chicken stock for my tastes. Second batch I cut the chicken stock in half and used half vegetable stock. Worked perfectly.

ReplyDeleteMade this yesterday, my takeaway: 1) Dice the garlic very small, I sliced it like the recipe said and it was too large to fully cook, made the entire pot sharp with garlic (which is okay, but not for everyone). 2) I used salt-free Herb-Ox bullion instead of stock to keep the sodium level down and only added 1 tsp or regular salt. 3) I would suggest using a large Teflon skillet instead of the stock pot, it was very cumbersome to mix, even with the linguine broken in half. 4) The linquine was very al dente, I was unwilling to test a noddle early because I wasn't sure the chicken was fully cooked. 5) It needs more spinach, 8 ounces isn't enough, and I too would add it all at the end. 5) Next time I will finely mince the garlic, omit the chicken, and throw in some shrimp at the end. The chicken just kind of complicated things, shrimp would be so easy. Other than that, loved it (and I did use the wine ... might have needed a couple more minutes at a boil for the alcohol to burn off).

DeleteMe again, I was the long January 16th post. I used the sun dried tomatoes in oil and drained the oil off. It might be nice to mention in the recipe to have a crusty loaf of bread on hand when you make this, to dip in the oil from the tomatoes. I didn't have bread on hand and had no use for the oil so I discarded it, seemed like such a shame.

ReplyDeleteMy teenage son LOVES this recipe and wants me to make it this spring (baseball season) so he can take it for lunch. The problem is he doesn't like chicken. He just eats the pasta and veggies. I'm looking for a protein alternative and how I would add it. Tofu maybe? I have zero experience cooking with that or shrimp (blehck--not a shrimp lover myself). Suggestions?
ReplyDeleteI am so happy that he loves this recipe. How about trying some smoked sausage? Costco carries an all natural chicken sausage that I absolutely love. You can slice it up and add it when the chicken is called for. You can also stir in any precooked protein at the end (sliced steak, meatballs, shredded pork, sausage, bacon, etc). Enjoy and I hope he loves it!

DeleteMade this dish last night. Used everything as in the recipe. Had to break the pasta in half to get in the pot, and had to increase the boiling time to 12 minutes according to my pasta directions. The pasta was still a little too "al dente," but the chicken was cooked through, although a little tough. It was good, but a little too spicy for my taste. Next time I will cut the crushed red pepper flakes by at least half and probably brown the chicken before cooking it all together. Was a good dinner with lots of flavor. I'm thinking leftovers will be even better.

I was lucky to have any left to serve as I kept taste testing it to make sure the noodles were just so etc. It is one of the most flavorful taste explosions I have ever experienced and it's so simple to make. I'm so thrilled to find this recipe. Just out of curiosity, would this work with spaghetti squash??

DeleteI have made this dish twice and it is fantastic; however, there is absolutely no fat in the recipe and the second time, the chicken and spinach were on the bottom of the pot and they burned, but we got to it in time enough to change pans and save the dish for the most part. Next time, I think I am going to saute my chicken in a bit of butter/olive oil and then add the remainder of the ingredients with a little extra chicken stock and white wine. I will let you all know how it turned out. Very very delicious though. Also as a tip, I used my handy-dandy microplane to "grate" the garlic in and sliced my onions (last time I used shallot) very very thin. Great recipe, just not quite enough liquid.

ReplyDeleteMade this for dinner tonight. I sautéed the onions and garlic in butter, then deglazed the pan with the wine. It was absolutely delicious! My hubby doesn't typically care for food cooked in wine, and isn't a fan of tomatoes, but he had 2 dishes of it, and commented numerous times how good it was.
