Amaretto Summer Citrus Berry Splash Cocktail

Nothing says summer quite like fresh strawberries!  We can’t get enough of them and it is only May.  Chad has been working on some summer cocktails for our upcoming get-togethers this season.  Light and fresh cocktails are always a hit.  An adult beverage with just a touch of spirits is perfect for a family barbecue. This limoncello splash is amazing!

This Amaretto Summer Citrus Berry Splash Cocktail is light and refreshing but bursting with flavor.  The sweet strawberries combine with the tart lemon and bright orange juice to create a lovely foundation for this summer treat.  The amaretto melds perfectly with this drink, brightening the citrus and berry flavors.  You certainly don’t taste any alcohol in this one, but watch those cocktails…  It is the ones that go down smooth that really sneak up on you! Ingredients
 

For Strawberry Simple Syrup

  • 1 1/2 cups strawberries, sliced
  • 1 cup water
  • 1 cup granulated sugar

For Cocktail

  • 1 1/2 ounces prepared strawberry syrup, recipe below
  • 1 ounces fresh squeezed lemon juice
  • 1 ounces orange juice
  • 1/2 ounce simple syrup, 50/50 mixture sugar and water, brought to a boil and cooled
  • 2 ounces DiSaronno Amaretto, almond liqueur
  • ice

Instructions
 

Prepare Simple Syrup

  • Combine the strawberries and water in a saucepan over medium high heat.
  • Bring to a boil, then reduce to a simmer and cook for 20 minutes, until the liquid is deeply red and the strawberry are soft.
  • Strain the strawberries through a fine mesh strainer into a clean saucepan, making sure not to press down on the berries (this makes the syrup cloudy). Discard the solids.
  • Add 2 cups of sugar to the liquid and bring the mixture back to a boil, stirring frequently to dissolve the sugar.
  • Cool the syrup before using.

To Make the Citrus Cocktail

  • Fill cocktail glass with ice. Pour in remaining ingredients and stir to combine.
  • Garnish with strawberry or lemon slice. Serve and enjoy!
