The meals that really stick in my memory from my childhood are the ones that we enjoyed on Sunday.  Sunday dinners were always filled with family, fun, lots of love and the best food we ate all week.

Memories of my mom and dad in the kitchen wash over me as I remember those days.  My daddy belting out a heartfelt 50’s tune to my mom in the kitchen still leaves me swirling.

Singing, dancing, loving, that is our family way…  The kitchen has always been a place of incredible love, fabulous food, and the best memories.

As I carry the tradition on with my little girl, the kitchen continues to be the source of incredible love, great entertainment with dancing, singing and the best food I can prepare for my family.

Today’s life is so much more busy than the days I remember, a quick and easy dinner is certainly on the agenda.  Sundays spent in the kitchen may be few and far between, but a fabulous family dinner any night truly makes me grin.

Helpful Tips to make 25 Minute Chicken Parmesan:

  • You can use your own mixture of Italian cheeses. I like mozzarella, provolone and romano.

What you will need to make 25 Minute Chicken Parmesan with Linguine:

  • Mixing BowlsI like a variety of mixing bowls and prep bowls and this set has them all.
  • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.

Chicken Parmesan with Linguine

Chicken Parmesan with Linguine  is simmered in a scrumptious tomato sauce and topped with oodles of cheese, served over a bed of linguin… With a little more cheese… WOW! A simple recipe ready in just 25 minutes, it can be on your table any night of the week!
prep time: 15 minscook time: 10 minstotal time: 25 mins


  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 (8 oz.) cans tomato sauce
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 8 ounces linguine, uncooked
  • 8 ounces mozzarella cheese, shredded and divided
  • 1 tablespoon chopped fresh Italian flat-leaf parsley


  1. Prepare dipping station with 2 bowls, add egg to the first bowl with a tablespoon of water, beat to create your egg wash.
  2. Add grated Parmesan to the second bowl.
  3. Dip chicken into the egg and then in the Parmesan cheese, pressing it onto the chicken if necessary. Turn the chicken and repeat on the other side.
  4. Heat oil in a large nonstick skillet on medium heat. Add onions and garlic; cook until softening, about 3 minutes. Add chicken to the skillet; cook for 3 minutes on each side. Add tomato sauce, sprinkle with Italian seasoning, salt and pepper. Stir the sauce and cover. 
  5. Simmer 15 min. or until chicken is done (165ºF).
  6. Meanwhile, cook pasta in a large pot as directed on the package. Drain and set aside.
  7. Sprinkle shredded cheese over chicken; cook 2 to 3 minutes or until mozzarella is melted. Top with fresh herbs and more grated cheese.
  8. Drain pasta. Serve with chicken.

  7. why not brown the chicken? cooking for a little longer or at a higher temp would brown the chicken and create a nice golden brown crust. doing that and then putting the sauce on would make for a much better dish, chicken parm is all about the crust!

  8. Ty, You are so right. Browning would bring out the flavor of the chicken. It's not always only about the cheese!!!
