I grew up in a loving home with 7 of us. Mom and Dad both worked several jobs and to say we were on a shoe string budget is a an understatement. I lived a blessed life, dont get me wrong, but with such a full house time was a hot comodity. Occasionally my mom would prepare semi-homemade food. Sloppy joe’s were a favorite. Straight from the can. Pure messy deliciousness! We could never get enough.

Easy Sloppy Joe Recipe

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound lean ground beef, I like 88%
- 1 8 ounce can tomato sauce
- 1 โ2 chipotle peppers in adobo, chopped (to taste)
- 1 tablespoon adobo sauce, from chipotle peppers
- 2 tablespoons packed light brown sugar
- 2 tablespoons Worcestershire sauce
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon New Mexico chili powder
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 4 hamburger buns
- 1 tablespoon unsalted butter, room temperature
- 8 pickle slices
Instructions
- Preheat the Oven: Preheat oven to 425ยฐF. Line a rimmed baking sheet with parchment paper for easy cleanup.
- Cook the Beef: In a large skillet over medium heat, heat olive oil. Add ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 5โ6 minutes. Drain excess grease if needed.
- Make the Sauce: In a medium bowl, whisk together tomato sauce, chopped chipotle peppers, adobo sauce, brown sugar, Worcestershire sauce, onion powder, garlic powder, cumin, chili powder, salt, and pepper until smooth.
- Toast the Buns: Place hamburger buns cut side up on the prepared baking sheet. Spread lightly with butter. Bake for 5โ7 minutes, or until golden brown and lightly crisp.
- Simmer the Filling: Pour the chipotle sauce into the skillet with the cooked beef. Stir to combine and let simmer for 4โ5 minutes, until the sauce thickens and clings to the meat. Remove from heat.
- Assemble and Serve: Spoon the smoky beef mixture onto toasted buns and top each with 2 pickle slices. Serve hot and messy!
