Pecan Banana "Ice Cream"

Munchkin's favorite flavor is banana.  She eats bananas like a monkey and could eat even more if I would let her.  So, when I saw posts for banana ice cream popping up everywhere I was intrigued.  There are so many variations with peanut butter, Nutella, chocolate or strawberry sauces and so many more.

I decided to keep this simple.  Banana "Ice Cream" with a sprinkling of toasted pecans.  I was surprised at how creamy this dessert treat was.  Munchkin was delighted with her very own bowl to eat.  Of course mommy fed it to her.

Pecan Banana "Ice Cream
serves 4

6 ripe bananas (3 fresh and 3 frozen)
1/2 cup toasted pecans

Place bananas in a blender.  Blend until mixture starts to get creamy, scraping down sides as necessary.  Add pecans and pulse until completely combined.

Transfer to a resealable container and place in freezer for 3-4 hours.

Scoop and serve or scoop and place scoops into a container for later use.  If you decide to leave it in the freezer, just allow it to sit at room temperature for 10 minutes or so, to soften before serving.
