Happy Monday everyone.  We had a beautiful weekend, hope you did too!  Today we feature a fabulous smoothie to kick your week off right!!!

It is autumn and the proof is in the pomegranates.  They are everywhere!  I love them and have been thinking of how many ways I can use them.  There is an amazing sale on them this week, so we are stocking up.  Did you know a pomegranate will last up to 2 months in the refrigerator and up to a month on the counter?  Also that you can remove the arils (seeds and the surrounding water-laden pulp) and freeze them? I can’t tell you all the ways that I can think of using these.  Smoothies, cocktails, sauces, salad dressings, pies, savory dishes…

AboutPomegranate.com provided these wonderful facts;  pomegranate is not only delicious but one of the most nutritious fruits to eat. It is rich in vitamin C, vitamin B5, potassium and also polyphenols, a potent form of antioxidants. It is also considered one of the high-fiber fruits. A ½ cup of pomegranate arils contains only 80 calories, but is packed with 5g of fiber and 180mg of potassium.

Today we are sharing our favorite smoothie this season (although I am sure there are plenty more to come) Pomegranate Banana Smoothie.  As Chad put it:  its perfect.  Don’t change a thing!  I hope you enjoy it, it got rave reviews from all 3 of us.  Em drank almost a whole glass on her own!!!

Ingredients
 

  • 1 banana, frozen in pieces (at least 1 hour)
  • 1/2 cup ice
  • 3/8 cup non fat plain yogurt
  • 3/4 cup fresh pomegranate juice, seeds can be included, if you choose

Instructions
 

  • Blend, serve, enjoy!!!

  1. I wish I had someone living in my house that could just make me a smoothie as soon as I got up.I am so impatient with hunger in the morning I usually eat cereal right away but this looks amazing and I must try it

  2. @Mary, to juice the pomegranate…. I guess I should have done a how to. Well, here goes…

    Prepare a large bowl of water in your sink.

    Slice the top 1/4" and bottom 1/4" of the pomegranate. Then score the pomegranate (through the red skin only) in 4 places (as if you are quartering it). Move your pomegranate to the bowl with water. Spread it open and gently pop out the arils with your fingers. The arils will sink to the bottom and the membrane will float on top. Once you have removed all the arils, skim the top of the water with a sieve to remove the membrane. Drain the pomegranate arils and move to blender. Blend and strain. You can leave the seeds in for fiber but I found them unpleasant to eat, so I strained them. Hope that helps!

  3. Oh, and did I mention that pomegranate stains just about everything, so I doubled up some paper towels and laid them on the cutting board, then cut on top of them.

  4. I've been seeing pomegranates everywhere as well…looks like I'll just have to whip up one of these smoothies then. Sounds delicious! I love the color.

  5. Oh I love this recipe! The photo is outstanding! Pomegranates are fantastic. I saw them in the store recently but they're still a bit expensive. I love them with yogurt! Great recipe and so pretty

  6. I saw a basket overflowing with pomegranates yesterday while at the market and swiped a few up with no clear determined destiny; I'm definitely going to give this smoothie a go 🙂 What a refreshing breakfast treat.

    Pomegranate is amazing in smoothies, and even better with the banana! I make a different smoothie every morning, and I’ll be making this smoothie weekly!
