So, obviously you must be thinking to yourself… Chicken again??? Yes, I got a great deal on chicken and bought a huge package. Then I was too tired to split up the package, so it all went into the freezer. So, when I defrosted it…. Viola!!! Enough chicken for a week.
But, this is my last chicken recipe for a while. I have lots of fun things on the menu for the next week. Tomorrow is a fantastic pizza that is low calorie. So, make sure you check back.
So, here we have a fantastic chicken salad served over 100 calories sandwich rounds. I served it with a Tomato Basil side salad. It was fabulous! There is such amazing flavors and textures going on in this sandwich. The apples and grapes offer a sweet flavor and the celery a huge crunch. The flavor is smooth and delicious! I could eat this every day. If you have leftover apples try our apple salad. You can also use up your grapes to make this amazing roasted grapes and sausage recipe.

COMBINE SALAD BASE: In a large mixing bowl, add 3 cups diced chicken, ยพ cup halved grapes, 1 chopped Gala apple, ยฝ cup chopped celery, ยฝ cup chopped pecans, and ยผ cup diced red onion. Toss gently to combine.
MAKE DRESSING: In a medium bowl, whisk together ยฝ cup mayonnaise, ยฝ cup sour cream, 1 teaspoon Dijon mustard, 1 tablespoon fresh lemon juice, ยฝ teaspoon kosher salt, and ยฝ teaspoon fresh ground black pepper until smooth and creamy.
MIX: Pour the dressing over the chicken mixture. Fold gently until everything is evenly coated.
CHILL: Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
SERVE: Stir once before serving. Garnish with fresh chopped parsley if desired.
