Taco Soup Recipe (Crockpot / Slow Cooker) + Video

Taco soup combines seasoned beef with beans and veggies for an easy, filling meal. Make it in the crockpot, then add your favorite toppings!

Ingredients for this taco soup recipe

Note: This is only a partial list of ingredients. For the full list, see the recipe card at the bottom of the post.
  • Ground beef - Use a lean blend, or substitute with ground turkey or chicken instead. Brown it in a skillet first so you can drain off the grease, and it will also help prevent the meat from clumping together.
  • Fire roasted corn - If you can’t find this, feel free to use regular corn instead. You could also saute the corn on the stove until slightly charred to add that southwest flavor.
  • Canned beans - Drain and rinse the beans to reduce the sodium as well as the gas-producing starches. If you still want the extra liquid for a thinner soup, just add more beef stock.
  • Beef stock - Using this instead of water adds rich flavor to the slow cooker taco soup. Vegetable stock would also work, or replace with chicken stock for ground turkey or chicken.
  • Taco seasoning - Use a packet from your favorite brand or 2 tablespoons of a
    homemade blend
    .

Equipment needed for making this recipe
  • Slow Cooker - Great for soups, roasts, shredded chicken, and more! I love it in the cooler months, but it’s also great in the summer when you don’t want to heat up the whole house with the oven.
  • Potato masher - Thanks to watching the Rachael Ray show, my new favorite way to break up ground meat is a potato masher. It’s so much easier than using a wooden spoon.
  • Non-stick Skillet - Everyone needs a good skillet. I use this almost daily for everything from cooking eggs to browning chicken and ground beef.

Common questions and notes

Can you cook frozen ground beef in a crock pot?
 
While you technically can, you definitely shouldn’t. Many reputable sources, including food safety sites, agree that it’s not safe because the meat doesn’t get to a safe temperature fast enough.

This can create conditions for bacteria to flourish, which is especially harmful to children, the elderly and immuno-compromised, or those who are pregnant.

Tips for easy cleanup
 
Use a slow cooker liner before adding the ingredients so you don’t have to soak the crock. Once you’ve stored your leftovers, simply lift the liner out and throw it in the trash.

You could also make this taco soup crockpot recipe in an Instant Pot instead. Use the Saute function to brown the meat, then switch to the Slow Cooker function to finish the dish.

Toss the stainless steel pot and sealing ring in the dishwasher when you’re done for the easiest cleanup ever!

Storage and reheating
 
Transfer leftovers to an airtight container and keep in the refrigerator for 3 to 4 days.

Or, freeze in jars or sealed containers for up to 3 months. Be sure to allow room at the top for the soup to expand. Then, thaw in the refrigerator overnight before reheating.

Heat the soup on the stove or in the microwave in bursts until warmed through.

Slow Cooker Taco Soup

Taco soup combines seasoned beef with beans and veggies for an easy, filling meal. Make it in the crockpot, then add your favorite toppings!

Ingredients

For the Soup
  • 1 pound lean ground beef
  • 1 1/2 cups fire roasted corn, canned or frozen
  • 1 medium white onion, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (7-ounce) can green chilies
  • 1 (14.5-ounce) can fire roasted diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 2 cups beef stock
  • 1 package taco seasoning (2 tablespoons)
For the toppings
  • Avocado
  • Cheese
  • Cilantro
  • Sour Cream
  • Tortilla chips

Instructions

  1. Brown the beef in a medium skillet over medium-high heat. Drain off the fat, and transfer to the slow cooker.
  2. Add the remaining soup ingredients, stir together, and cook on low for 6-8 hours (or 3-4 hours on high) until onions and beef are tender.
  3. Ladle into bowls and top with cheese, sour cream, avocado, cilantro, and tortilla chips.

  1. I have found that if you use lean ground beef it's not necessary to cook it before putting it in the crockpot. I simply mix it up/mash it up with whatever liquids are called for and it doesn't clump either. Saves a step and time. Has always worked fine for me.

  5. @Echo You could probably thicken it up by adding a small can of tomato paste, and/or use less beef broth than what is called for. Just an idea.

  6. I made this dish the other day and it was delicious. My daughter was recently diagnosed with corn allergies, so I didnt use corn I used the yellow bell peppers instead and no one noticed that there was no corn in the dish. My family loved it.

  9. This is the best recipe ever!!! We started making it about a year ago, and it has become a staple in our house. We make it thicker (by using less beef broth) and we call it taco chili. We always make enough for at least two meals, and there are never any leftovers. We are big cumin lovers, so we usually add an additional tablespoon of cumin. Thanks so much for this recipe!!
