25 Minute Chicken-Parmesan Pasta Toss

The best Sundays always began with the promise of a fantastic dinner.  We would wake to the sound of dad in the kitchen preparing the pots and pans.  A slow morning with oodles of family time would come to an end with mom saying “be home before dinner” as my brother ventured out of the house.  I never did go far, even at a young age I felt most at home in the kitchen.


Chief vegetable washer and pot stirrer was most likely my title, as those were my favorite jobs.  I remember sitting at the kitchen table watching my mom grab a pinch of this and a dash of that as she created our Sunday dinner masterpiece.  Sometimes I would scrunch my brow as I watched her add an ingredient.  I could not imagine why she was adding ‘that’.

Years later I have learned that the most amazing cooks develop insight far beyond that of a child’s imagination.  For exactly that reason I decided to give this recipe a try.  With Kraft Parmesan Cheese and Hunt’s Fire Roasted Diced Tomatoes I knew it would be good, I could only imagine the possibilities that Zesty Italian Dressing would bring.

Even with just 10 ingredients this dish is incredibly dynamic; I grabbed a tasting fork and dove in for the pre-dinner taste test.  The combination of cheese, fire roasted tomatoes and zesty Italian dressing gives this dish such a vibrant flavor, I had to go back for more!  So I grabbed a saucer and loaded it with chicken and pasta.  As I ate it standing next to the countertop, my 3 year old walks in and busts me!  “Hey mooooommmy!” And dinner is served.

Chicken Parmesan Pasta Toss is such a versatile recipe.  Using your ‘cooks insight’ you can create so many variations.  I am going to try swapping the Zesty Italian Dressing for Sun-dried Tomato Dressing.  Then use Hunt’s Diced Tomatoes with Spicy Red Peppers, oh what a dinner that will be!

All in under 30 minutes, Sunday dinner is now a weeknight meal!

Chicken Parmesan Pasta Toss
serves 4

Recipe adapted from Kraft

Active time 15 minutes
Total time 25 minutes

1/2 lb linguine, uncooked
1 Tbsp extra virgin olive oil
1 lb boneless skinless chicken breasts, cut into strips
3 Tbsp Hunt’s tomato paste
1/4 tsp garlic powder
1 can (14.5 oz) Hunt’s Fire Roasted Diced Tomatoes with Garlic, undrained
1/2 cup water
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup KRAFT Grated Parmesan & Romano Cheese
1 Tbsp chopped fresh parsley

Cook pasta as directed on package, omitting salt.

Meanwhile, heat oil in a large nonstick skillet on medium heat.  Add chicken; cook 8 minutes or until done, flipping once.

Stir in tomato paste and garlic powder; cook and stir on medium-high heat 1 min.


Add tomatoes.


Add dressing and water.


Using tongs or a spaghetti server, lift pasta from water and place into skillet. 


Toss pasta and cover with sauce.  Cook 2 minutes.

Sprinkle pasta with cheese and parsley.  Serve and enjoy!
