Last week when I was buying fruit for the piña colada cocktail my munchkin pointed at the coconut and pineapple and said, “pops mommy”! Well, I thought, I can do that. So, after Chad created the fabulous Classic Piña Colada for Ladies Night I decided to follow his lead and create an amazing Virgin Piña Colada Ice Pop.
It was a complete success, they are cold, refreshing and deliciously tropical. These ice pops are packed full of fresh pineapple and creamy sweet coconut flavor. If only I could have gotten a cabana boy and an umbrella it would be a pure vacation in a pop. Well munchkin and I love these and if we have any left we will serve these at our Labor Day party in 2 weeks. Enjoy!

Virgin Piña Colada Ice Pops
- 1 1/2 pounds pineapple, about 1 whole pineapple cut into chunks
- 6 ounces pineapple juice
- 1 cup coconut milk
- 1 cup whole milk
- 1 cup coconut cream
- Combine all ingredients in a blender. Blend until smooth. Pour into ice-pop molds. Freeze 6-24 hours. Serve and enjoy!
