Meatball Tortellini Soup (Slow Cooker)

Meatball tortellini soup combines lean beef, veggies, and tender pasta in a rich, flavorful broth. Feed the whole family with this easy recipe!

This tortellini soup with meatballs is the definition of “set it and forget it” cooking. Spend a few minutes prepping the ground beef and carrots, then toss everything into the crockpot and be on your way!

All you have left to do is add the pasta during the last hour of cooking so it’s perfectly tender without falling apart.

  • Switch up the meat. Ground turkey or chicken are a wonderful lean alternative, or you can try spicy pork sausage to add a little heat.
  • Add more flavor. Mix your favorite spices into the ground beef before you roll it into balls. A blend of Italian seasoning, garlic powder, and onion powder are usually my go-tos.
  • Try different sauces. This is an easy way to play with flavor since there are so many varieties to choose from! Grab your favorite jar or whip up a batch of my homemade marinara instead.
  • Want to use fresh pasta? Whether you make your own or grab a package from the refrigerated section of the store, all you need to do is stir it in closer to serving time. 15 to 20 minutes should be perfect.

What else can I add to slow cooker tortellini soup?

Feel free to toss in any vegetables that need to be used up like celery, zucchini, or even some spinach. Greens should be mixed in just before serving since they only take a few minutes to wilt.

Cannellini beans or chickpeas can make the dish more filling, and everything always tastes better with freshly grated Parmesan on top!

Can I make this meatball tortellini soup on the stove instead?

You sure can! Simmer everything in a large pot on low for about an hour and stir in the pasta during the last 20 minutes or so.

How long do leftovers last in the refrigerator?

Once cooled, transfer everything to an airtight container and enjoy within 3 days for best results.

Reheat in the microwave or on the stove until both the meat and pasta are warmed through to the center.

Meatball Tortellini Soup (Slow Cooker)

Meatball tortellini soup combines lean beef, veggies, and tender pasta in a rich, flavorful broth. Feed the whole family with this easy recipe!

  • 1 pound lean ground beef
  • 1 cup frozen onions and peppers
  • 2 cloves garlic minced
  • 4 cups beef stock
  • 1 teaspoon sugar
  • 1 cup spaghetti sauce
  • 2 carrots, sliced
  • 1 teaspoon garlic salt
  • 1 teaspoon pepper
  • 1 (19 ounce bag) frozen cheese tortellini


  1. Roll your pound of lean ground beef into small meatballs.
  2. In to your slow cooker add in the onions and pepper, garlic, beef stock, sugar, spaghetti sauce, sliced carrots, garlic salt and pepper.
  3. Stir to combine and add in the meatballs.
  4. Cook on low 4-6 hours or high 4 hours.
  5. About 45 minutes before you are ready to serve add in the tortellini.
  6. Serve!
