Smoked Baked Potato + Video

Making a smoked baked potato is one of the easiest smoker recipes around! This recipe is a must-make; you'll love the flavor of smoked potatoes!

Baked potatoes are one of the most versatile meals I've found because there are so many different ways to cook them.

And, the topping ideas are almost endless. And, I have just learned how to make the most wonderful baked potato in the smoker.

Have you had a chance to try my other smoker recipes? My smoked baked beans were our first smoker recipe.

These tender beans with bacon are the perfect side dish!  Smoked chicken quarters are juicy and tender on the inside with crispy skin on the outside.

Temperature and time for a smoked baked potato

When it comes to making smoked potatoes, time and temperature are the most important things to consider.

Of course, there will be slight variations depending on the type of smoker you have and the size of your potatoes.

But, for the most part, you will want to set your smoker to 375F. It will take about 15 minutes to preheat.

After it preheats, you should cook the potatoes for about an hour. Test them by sticking a fork in them. If the fork goes in easily, it is done.

Remember that a larger potato will take longer to cook.

If you prefer to let your baked potato smoke for longer than an hour, you can lower the temperature.

Just set your smoker to 225F.  Then, cook the potatoes for 2 to 3 hours at the lower temperature. Remember to check them to be sure they are done and not overcooked.

One of the best things about making smoked baked potatoes is that you can cook them along with whatever else you have in the smoker.

So, if you are making my smoked chicken quarters, just add the potatoes in the smoker.

Just remember that you will need to time them so that they are both done at the same time.  Adjust the temperature and cooking time accordingly.

What type of potatoes to use 

I am smoking russet potatoes. They are an all-purpose potato that is often chosen for baking. But, that doesn't mean that you can't use another type of potato.

Smoked red potatoes would work as well. When choosing, be sure that all of the potatoes are a uniform size.

This way they will all be done at the time time.

Tools needed 

This is a quick and easy side dish that only needs a few simple tools.
  • Smoker - I have love my pellet smoker (Traeger and Green Mountain Grills are both great)
  • Your favorite wood chips - I love this blend and use it for just about everything

Choosing the right wood chips

Experimenting with different types of wood chips is part of the fun of using a smoker.

The type of wood chip you use will really make a difference in the flavor of your smoked baked potato.

I am using my favorite blend of oak, maple, and hickory on my pellet smoker.

But, you can experiment with apple, cherry, mesquite, or whatever other flavors you enjoy smoking with.

Applewood smoked potatoes sound absolutely amazing. I'll need to try that next.

Preparing the potatoes for smoking 

The potatoes don't need a lot of preparation when you are making smoked baked potatoes.

Just place the potatoes on a sheet, tray or work surface and use a fork to pierce the skin all over.

Then, coat them in the olive oil and rub the salt all over the potatoes. You do not need to cook the potatoes before you add them to the smoker.

Should the potatoes be wrapped in foil? 

When it comes to making baked potatoes, so many people want to wrap them in foil. When you make smoked baked potatoes, you don't need to wrap them in foil.

This way, the smoke leaves a wonderful flavor in the potato. Wrapping them in foil will prevent the full flavor from developing.

But, if you are worried about the clean up afterward, you can wrap them in foil to make it easier. But, it's not necessary.

Smoked Baked Potato

Making a smoked baked potato is one of the easiest smoker recipes around! This recipe is a must-make; you'll love the flavor of smoked potatoes!
Prep time: 5 Minutes Cook time: 1 Hour Total time: 1 Hour & 5 Minutes

Ingredients

  • 4 russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • toppings such as butter, pepper, sour cream, and thinly sliced chives

Instructions

  1. Preheat the smoker to 375°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Place the potatoes on a sheet tray or work surface and use a fork to pierce the skin all over.
  3. Coat in the olive oil and rub the salt all over the potatoes.
  4. Once the smoker is to temp (about 15 minutes), place the potatoes directly on the grate. Depending on the size, check at an hour and the potatoes should be done. You know they are done when you can stick a fork in it all the way to the center.
  5. Use an oven mitt to hold the potato and give it a little squeeze to help separate the potato from the skin. Then immediately cut them open. Use a knife to slice the potato long ways down the middle (about 3-4 inches) and then do the same thing crossways. use a clean kitchen towel and both hands to push them open from each end.
  6. Immediately top with fixin’s! Enjoy.
DONNA'S NOTES
  1. To smoke at 225°F smoke time will be 2-3 hours, 275°F about 2 hours
