Instructions
Preheat the smoker to 375°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
Place the potatoes on a sheet tray or work surface and use a fork to pierce the skin all over.
Coat in the olive oil and rub the salt all over the potatoes.
Once the smoker is to temp (about 15 minutes), place the potatoes directly on the grate. Depending on the size, check at an hour and the potatoes should be done. You know they are done when you can stick a fork in it all the way to the center.
Use an oven mitt to hold the potato and give it a little squeeze to help separate the potato from the skin. Then immediately cut them open. Use a knife to slice the potato long ways down the middle (about 3-4 inches) and then do the same thing crossways. use a clean kitchen towel and both hands to push them open from each end.
Immediately top with fixin’s! Enjoy.

To smoke at 225°F smoke time will be 2-3 hours, 275°F about 2 hours
