Helpful Tips to make Applebee’s Tomato Basil Soup:

  • If you use low-sodium or unsalted chicken broth add more salt in the last step. It’s always best to season to taste just before serving. 
  • Instead of chicken broth you can also use vegetable broth.
  • If you prefer a sweeter soup increase the amount of sugar. Some brands of canned tomatoes have more acidity than others and need a bit more sugar for balance.
  • Instead of heavy cream you can also use half-and-half.
  • Using fresh basil gives you the best flavor but you can also use basil that comes in a squeeze tube you can find in the produce section or dried basil.
  • I recommend to puree the soup with an immersion blender or in a blender but if you don’t mind some little onion pieces you can skip this step.
  • Garnish the soup with croutons, fresh basil, and grated parmesan cheese.
  • Serve this soup with a grilled cheese sandwich on the site or some rustic bread.

  • Immersion Blender - An Immersion Blender is the perfect tool to blend soups and sauces right in the pot. Makes cooking so much easier!

Applebee’s Tomato Basil Soup

This Tomato Basil Soup is filling, comforting, and so easy to make from scratch! Move over Applebee’s, this easy soup recipe tastes even better than the original and is ready in only 30 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup white onion, chopped
  • 2 garlic cloves, minced
  • 2 1/2 cups chicken broth
  • 2 (28 ounce) cans crushed tomatoes
  • 1 tablespoon granulated sugar
  • 3/4 cup heavy cream
  • 1/4 cup fresh basil, minced
  • 1 1/2 teaspoon fresh or dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, or more to taste
  • 1/4 teaspoon ground black pepper
Garnish
  • Croutons
  • Fresh Basil
  • Freshly grated Parmesan Cheese

Instructions

  1. In a large saucepan heat olive oil over medium heat, then add chopped onion and saute until translucent, for about 2-3 minutes. Add garlic and saute for one more minute while stirring constantly.
  2. Add chicken broth, crushed tomatoes, and sugar. Bring to a simmer and cook uncovered for 20 minutes.
    Puree with an immersion blender or transfer to a blender and puree.
  3. Stir in heavy cream and herbs. Bring soup back to a simmer and cook for 5 minutes on low heat.
  4. Season to taste with salt and pepper. Serve garnished with croutons, basil, and grated parmesan cheese.

  1. Can I use fresh Roma tomatoes instead of canned? Is the amount still the same?
