Summer wouldn’t be complete without a special cool down treat. This year must be the summer of pools. We have been pool sitting for our neighbor, swimming in Nana and Papa’s pool and been to fabulous hotels with outrageous pool. Time for swim lessons and scrumptious popsicles to cool down by the pool with.
This Summery Orange Raspberry Ice Pop is knock your socks off delicious!
Combine orange zest and sugar in a small mixing bowl. Using fingertips or a fork, smash the two together until the sugar is moist from the zest. Add orange juice and amaretto, stir to combine.
Add raspberries to popsicle molds, dividing evenly. You can smash them in there if you like. Pour orange juice mixture to into molds. Cover with mold cover or aluminum fold and add sticks.
Freeze for 4-12 hours. Remove from molds, serve and enjoy!
Donna’s Notes
I store these in resealable sandwich bags to keep them fresh in the freezer. Place all sandwich bags into a 1 gallon resealable freezer bag and they will keep fresh for months. You can also use plastic disposable cups, aluminum foil and popsicle sticks if you do not have popsicle molds. I buy the 3 ounce cups for a perfect serving size.

Yum! So fruity and fresh tasting. I will be taking these to the pool next time.
How do you keep the fruit from ending up all in the bottom of the mold?
