Combine orange zest and sugar in a small mixing bowl. Using fingertips or a fork, smash the two together until the sugar is moist from the zest. Add orange juice and amaretto, stir to combine.
Add raspberries to popsicle molds, dividing evenly. You can smash them in there if you like. Pour orange juice mixture to into molds. Cover with mold cover or aluminum fold and add sticks.
Freeze for 4-12 hours. Remove from molds, serve and enjoy!
Notes
I store these in resealable sandwich bags to keep them fresh in the freezer. Place all sandwich bags into a 1 gallon resealable freezer bag and they will keep fresh for months.You can also use plastic disposable cups, aluminum foil and popsicle sticks if you do not have popsicle molds. I buy the 3 ounce cups for a perfect serving size.
