Cheeseburger Spring Rolls are the ultimate savory snack or appetizer, combining two favorites into one! Golden and crispy with maximum crunch, these are over the top with a creamy, tangy homemade dipping sauce. Make a whole batch of copycat Cheesecake Factory cheeseburger spring rolls in just 30 minutes!

It’s a well-known fact (or joke?) that the Cheesecake Factory menu is miles and miles long. I say it’s great to have options so everyone is happy! 

While there are plenty of appetizers to choose from such as sweet corn tamale cakes and crispy crab bites, the cheeseburger spring rolls at Cheesecake Factory may be the best — after the basket of bread, of course.

Perfect for parties, game nights, or casual gatherings, these savory fried spring rolls combine your favorite cheeseburger flavors into one crispy, handheld bite!

Ingredient Notes and Substitutions

  • Ground Beef – The leaner the blend, the less grease you’ll need to drain after browning.

    You could also substitute ground turkey or chicken if you’d like, but I recommend adding some seasoning if you do.
  • Cheese – I like to use American cheese slices for this recipe since they are super melty.

    Feel free to use cheddar, Colby, or Monterey Jack as long as you slice it thin and dice into pieces first.
  • Spring Roll Wrappers – These are thinner than egg roll wrappers and get super crispy when fried. Be sure to grab the ones made with wheat flour, not rice flour.
  • Cornstarch & Water – No, we’re not using this as a thickening slurry.

    Instead, this mixture helps to seal the cheeseburger spring rolls so they don’t fall apart when fried! I’ve found that it works a little better than just water alone.
  • Vegetable Oil – Use any neutral frying oil you have on hand — vegetable or canola are my top picks, but peanut or sunflower oils are great too.
  • Dipping Sauce – Combine mayo, sweet pickle relish, ketchup, minced onion, and paprika for a homemade version of the Cheesecake Factory cheeseburger spring rolls sauce.

    But if you’re short on time (or ingredients), you can use your favorite Thousand Island dressing instead!

Tips to Make Copycat Cheesecake Factory Cheeseburger Spring Rolls

  • Make sure rolls are properly sealed before frying.

First, you’ve got to roll them properly. Lay the wrapper on a flat surface in the shape of a diamond.

Add the filling in a horizontal line in the center, then fold the bottom corner up over the filling, gently tucking it on the other side. 

Tuck each side over the filling, then roll towards the top corner. Don’t roll too loosely, but don’t make it too tight either — both extremes will cause the rolls to fall apart.

Most people seal just the top corner, but you can spread the cornstarch and water mixture all along the edge of the top corner once the sides are tucked in to be extra sure.

  • Avoid soggy fried spring rolls.

No matter what you’re frying, it’s important to bring the oil to the correct temperature… and keep it there!

Leave a candy thermometer in the pot and keep a close eye on the temp, especially between batches.

Adding food causes it to dip, so let it come back up before frying the next batch.

Once golden and crispy, transfer Cheesecake Factory cheeseburger spring rolls to a paper towel-lined plate to drain any excess oil before serving.

  • Get creative with fillings.

According to their website, the cheeseburger spring rolls at Cheesecake Factory contain ground beef, grilled onions, and lots of melted cheese.

But you can customize this recipe however you’d like — that’s the fun of homemade, right??

Swap the American cheese with Swiss and sauté some chopped mushrooms with the onion.

Or, stir crispy bacon pieces and blue cheese into the filling (again, we’re swapping the cheeses here).

You could also include other veggies in the filling — chopped bell peppers, shredded carrot or zucchini, or diced tomatoes would be yummy.

Prep Ahead

  • Dice onion and cheese
  • Heat frying oil to 350°F
  • Mix dipping sauce

Kitchen Tools You Will Need

  • Large Skillet for making the filling, then another for deep frying the rolls.
  • 2 Tablespoon Scoop guarantees that each spring roll has the same amount of filling.
  • Sieve or Tongs to get your food in and out of the hot oil safely!
  • Mixing Bowl – I like to have a variety of sizes on hand, and this set has them all.

Serving Suggestions 

Pair this dish with a fabulous homemade dipping sauce — just like the restaurant! 

Simply mix the sauce ingredients until well combined and smooth, then dunk your cheeseburger spring rolls while they’re hot and crispy.

I think bloomin’ onion sauce, copycat Chick fil A sauce, or even Big Mac sauce would be tasty too.

Storing and Reheating Leftovers

Cheeseburger spring rolls like Cheesecake Factory are best served hot and fresh for maximum crunch. However, leftovers can be kept in the refrigerator for 3 to 4 days.

Reheat in the air fryer for best results — this will get them hot and crispy again in just a few minutes. 

Or, spread leftovers on a baking sheet in a single layer and bake for 4-5 minutes at 400°F, flipping halfway.

How do you keep spring roll wrappers from cracking?

Keep the wrappers moist! Don’t open the package until you’re ready to start rolling, and keep the stack under a damp paper towel while you work on each one.

What temperature do you deep fry spring rolls?

Bring frying oil to 350°F before adding your food to ensure evenly cooked and crispy results.

A thermometer is the best tool for the job, but you can also test the oil in other ways! Toss a single popcorn kernel in the pot — if it pops, the oil is hot enough.

Or, place the handle of a wooden spoon into the oil. It’s at temperature if bubbles form around the handle and roll up the sides.

Can I freeze cheeseburger spring rolls?

Yes, but it’s best to do so before frying them. Assemble the spring rolls as directed, then place them in a single layer on a baking sheet and freeze until firm.

Transfer frozen spring rolls to a storage bag or container and freeze for 2 to 3 months. Then, fry as directed from frozen but increase the oil temperature to 375°F.

If you need to freeze cooked spring rolls, flash freeze them and store for up to 2 months. Reheat from frozen in the air fryer or oven.

Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 4 slices american cheese, diced
  • 2 tablespoons ketchup
  • salt and pepper, (to taste)
  • 8 spring roll wrappers
  • 2 tablespoons water, for sealing wrappers
  • 1 tablespoon cornstarch, mixed with 2 tablespoons water, for sealing the rolls
  • vegetable oil, (for frying)

Dipping Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon ketchup
  • 1 tablespoon minced onion
  • 1/2 teaspoon paprika


For the beef mixture:

  • Heat a large skillet over medium heat. Add the ground beef and diced onion to the skillet. Cook until the beef is browned and the onion is softened.
  • Drain any excess grease from the skillet, then return it to the heat. Add the diced American cheese, ketchup, and salt and pepper to the skillet. Stir until the cheese is melted and everything is well combined. Remove from heat and let the mixture cool slightly.


  • Lay one spring roll wrapper on a clean surface. Place about 2 tablespoons of the cheeseburger filling diagonally across the center of the wrapper.
  • Fold the bottom corner of the wrapper up over the filling. Fold in the sides, then roll tightly towards the top corner, sealing the edges with a mixture of cornstarch and water.
  • Repeat this process for the remaining spring roll wrappers and filling.


  • In a large skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
  • Carefully place a few spring rolls into the hot oil, making sure not to overcrowd the pan. Fry them until golden brown and crispy, turning occasionally for even cooking. This should take about 3-4 minutes per batch.
  • Once the spring rolls are cooked, remove them from the oil and place them on a paper towel-lined plate to drain any excess oil.

Dipping Sauce:

  • In a small bowl, combine mayonnaise, sweet relish, ketchup, minced onion, and paprika. Mix well until all the ingredients are thoroughly incorporated.
  • Serve the cheeseburger spring rolls hot with the dipping sauce on the side. Enjoy!
