It is so funny how things change. Five years ago (when I was pregnant with my daughter) I told my best friend, I will never change.
I will keep my kid out all night long and still visit you every night until midnight. I said I would never like Barney. I said I would never have a problem losing that 'baby weight' and I said that I would never understand why people try to find shortcuts in the kitchen.
Doesn't everyone love to spend all day in the kitchen preparing a dinner that is devoured in 20 minutes?
Well, five years later... Keeping Munchkin on a schedule is more important than visiting with friends (sorry friends), I kinda dig Barney and Dora. Go figure.
Although Munchkin does not watch much TV anymore (that is a story for another day). Baby weight still here. Yes, my 'baby' is 4, don't judge. I have a food blog. LOL
Lastly, I am now constantly on the hunt for quicker and simpler ways to feed my family in a healthier manner. 30 minute meals are big around here.
Even Christmas dinner, which used to be an all-day affair is now prepared in 30 minutes or in a crockpot. So, never say never.

In my quest for quick and easy dinners, one-pot meals have been spectacular for me. Only one pot to wash, yahoo! So last year I saw this one-pot pasta recipe all over the web. "One-pot" piqued my curiosity as I have a collection of one-pot meals.
This one is amazing! You literally toss it in a pot, cook it. Toss a few more things in and serve. Oh, my heavens. It is the perfect meal. Tomatoes, basil, ooey-gooey cheese, and sausage come together to create the perfect sauce for the pasta.
It is so flavorful that Chad and I ate two bowls each. Even Munchkin loved it, and I am sure you will too.

Helpful Tips to make One-Pot Cheesy Pasta and Sausage:
- Choose your favorite sausage. I prefer Italian sausage, but you can use your favorite.
- You can use reduced-sodium chicken broth in place of the water for even more flavor.
- You can substitute 1 pound any dry pasta for the spaghetti, just cook until al dente.
- To quickly cut the tomatoes: Grab 2 same size lids. You can use plasticware or lids from your fridge. The lid does not have to be round. You can use any size lid as long as it has a lip around the edge. You can even use small appetizer plates from your kitchen. Place lid with the lip facing up, so you have an edge that will hold your food. Fill lid with cherry tomatoes. Place the 2nd lid on top of the tomatoes with the lip facing down. Firmly press down on the top lid, but do not squish your tomatoes. The two lips will hold the tomatoes in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through them. Watch your fingers. And voila you have a plate full of sliced tomatoes in a blink!
What you will need to make One-Pot Cheesy Pasta and Sausage:
- 4 Quart Braising Pan - this is my favorite for my one-pot wonders. The spaghetti fits inside so you can put the lid on.
- Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

One Pot Cheesy Pasta and Sausage
A creamy, cheesy tomato basil sauce is cooked right into the linguine pasta in this amazing One Pot Pasta recipe, ready in 20 Minutes! Toss it all in a pot and let it cook. It's so easy it that just about cooks itself. Now that's my kind of meal.
prep time: 5 MINScook time: 15 MINStotal time: 20 mins
Ingredients
- 3 cups halved grape tomatoes, divided
- 1 large onion, sliced
- 1 pound smoked Italian sausage links, precooked (sliced into coins)
- 20-30 basil leaves, divided
- 4 garlic cloves, sliced
- 1 pound dry linguine
- 1 1/2 teaspoons kosher salt
- 1 teaspoon fresh ground pepper
- 4 1/2 cups water
- 1 cup shredded Parmesan cheese
Instructions
- Reserve (set aside) 1 cup halved tomatoes, 10 basil leaves, and cheese.
- Combine remaining ingredients in a large (12") braising pan or Dutch oven over medium-high heat. Cover and bring to a boil. Once water is boiling, remove the cover and cook 7-9 minutes until pasta is al dente (with a bite to it). Toss pasta with tongs occasionally to keep the pasta from sticking. The liquid will be mostly absorbed when pasta is finished cooking.
- Add cheese and toss to combine. Cheese may clump but will melt into the sauce after a few minutes. Toss in remaining tomatoes and basil before serving.
DONNA'S NOTES:

DeleteDid you buy the pre-cooked Italian sausage links at a regular market? I can't remember ever seeing them. I see the uncooked ones all the time, and the pre-cooked sausage like Hillshire Farms, but am not sure what you used in this recipe. It sounds so good and fast, I'd like to give it a try.

DeleteWe are confused by this also.The only smoked sausage near the kielbasa we found is Polish smoked sausage, rather than italian smoked sausage. Is this what you meant? Otherwise, they don't carry that in our stores.

DeleteJust had it tonight...was a bit skeptical, initially, but as soon as the aroma hit the house, I was convinced it was going to be delicious!!! Paired with brussel sprouts and prosciutto and served with Vienna bread and roasted garlic oleo dip and a glass of Valpolicella and made it a fancy meal!

I tried this the first time, and the onions overpowered the dish. I tried it the second time, but sauted the onions in a bit of EVOO first. Much better. Made it the third time using chicken stalk instead of water and BINGO - very good. Be careful to not cook off all of the liquid. It's a bit dry if you do.

ReplyDeleteI'm making this tomorrow and I plan on using some homemade pesto instead of fresh basil. We freeze our pesto in ice cube trays every summer so we can enjoy it throughout the winter too
DeleteI actually grow my own, but you can buy a whole basil plant at the grocery store for $3-4. Also, you can use one container of basil and it would be fabulous.

How much dried basil leaves should I use if I do not have fresh?
ReplyDeleteI would use a tablespoon in this recipe. The fresh basil added in first works to season the dish and the basil tossed in at the end is more of a leafy addition (almost like adding baby spinach). Enjoy and let us know how it goes.

I guess I would figure about how many pounds of spaghetti would you need to feel them and go from there. My guess would be that this recipe would feed 4 BIG eaters, so triple accordingly.

DeleteI've made this recipe twice already and love it. The only precooked italian sausage I could find at my local grover store was chicken sausage but it works great. A few changes I've made was subbing 1.5 cups of the water for chicken broth and I also add a tablespoon of butter and a little bit of white wine.

DeleteI saw this recipe a couple of months ago and thought I would give it a try. My kids love it. I made it for the 3rd time yesterday and now I'm wondering why I've been wasting all that time rolling meatballs and letting that sauce simmer for hours. I added a can of tomato sauce and some Italian herbs to it yesterday. No matter how you change it up, it comes out perfect every time.

This was AMAZING! This will be a go-to dinner for us. I can't wait to try the other one-pot meals. I used my dutch oven. I browned the garlic, onions and sausage in some olive oil. I deglazed the pan with 2 cups of red wine. The rest of the liquid was tomato paste in water. Next time I think I will use another onion and A LOT more garlic and basil.

DeleteIf you half the recipe, would you half the water for the pasta?
ReplyDeleteAbsolutely. But use your best judgement too. Once it is cooked the pasta should be loose (there should be some sauce in the pan). If it is dry, add a splash of water to the pan before you add your Parmesan.

No matter what recipe that calls for pasta; I Always will cook the pasta in veggie, chicken, or beef broth or stock. The stock is never wasted cause once it cools I put in container and place in freezer for next time around when it comes to cooking pasta.
Some of these older recipes are usually the best and this is one of the Best. Hubby loves it as well as the grandkids.
I made this and your one pot chicken recipes this week for my very Italian boyfriend who usually does all of the cooking. He was very doubtful that either would turn out edible but he ate his words. He went back for seconds and thirds and we could not believe how delicious and flavorful it was for being so easy and quick to make. Great recipe!

ReplyDeletePicked up a pack of chicken sausages last week and they were sun-dried tomato flavored. So totally had to use it for this dish. It turned out wonderfully! Even without the basil (forgot to pick it up from the store). Served it with a tossed salad and toasted garlic bread.

I switched the pasta for spaghetti squash used turkey sausage and addded olives then baked it in my panini pot. I wander sure about the water since it was mainly for the pasta, but I added a quarter cup just to be cautious. So delicious!! I'm glad I bought enough to make it a second time ��

ReplyDeleteThis dish quickly became a favourite for myself and the other half. As we've made it, I've tweaked the recipe a bit and thought I would share with others what we've done, just in case someone else is adventurous like me in the kitchen!
ReplyDeleteTo start, we have never found good pre-cooked sausages, so we start with raw mild Italian sausages and brown them in the pan we use for the dish. I actually overcook them a little, ensuring they brown nicely before I coin them. Instead of wasting all that lovely flavour, I add a cup of white or cooking wine into the pan and let that set while I prep the rest of the ingredients (tomatoes, onions, basil, etc). I then add a healthy sprinkling of red pepper flakes and a cube of chicken stock (the kind I buy uses one cube per two cups of water). Instead of adding the full amount of water as listed, I add the remainder, minus the cup of wine from earlier, combining all the ingredients in the pan as directed, following the remainder of the recipe as written.
There are some occasions where I'll add a spoonful or two of spaghetti sauce to really amp up the tomato flavour, but honestly, this dish does a great job of letting the cherry/grape tomatoes do all the flavouring for you! Also, we always use linguine, because it's our favourite.
I've wondered if perhaps adding some button mushrooms to this might make it even better, but even just following the recipe as is really does turn out beautifully. For those more adventurous, this is a great base recipe that you can add your own pizzazz to! Happy cooking, everyone!
Has anyone tried using the canned Italian flavored diced tomatoes instead of the cherry tomatoes and fresh basil?

ReplyDeleteNo. The basil is what flavours the dish and broccoli would not lend a proper flavour to an italian-inspired dish.

ReplyDeleteI've made this several times and it's a household favorite. It doesn't make the greatest leftovers though. I've also made it just using dried basil and it is great!

ReplyDeleteI made two alterations, for dietary reasons: uncooked Italian sausage and substitute cremini mushrooms for the onion. I cooked the sausage in the pot, removed it, and cooked the mushrooms in the sausage drippings. I followed the recipe as given after that. It was delicious and my whole family loved it!
ReplyDeleteMade this for dinner tonight with my 12 yr old and it was fantastic. We used the fully cooked and packaged chicken sausage over by tbe deli meat at the grocery store and one can of chicken broth and the rest water and it was fantastic.
ReplyDeleteMade this tonight with ground Italian sausage. I used two cans regular sized diced tomatoes, and 4 cups broth. Flavor was great, but sauce was a little thin. Definitely a keeper!
