Fruit of the Islands Ice Pops: Raspberry, Mango, Pineapple and Kiwi

We are truly enjoying the fruits of summer this year.  This ice pop was inspired by my desire to make an awesome ice pop that brought together some of the flavors of the islands and then luckily, the planets aligned (aka the store sales cooperated).  We combined some of our favorite flavors to make an incredibly eye catching amazingly flavored ice pop.  This one our Munchkin calls an I-Pop.  Cute huh?

Truly a rainbow of fruit flavor. Geesh, every time I start to describe this I run across another product advertisement.  Those Saturday morning commercials must have been really good as a kid.   They are still stuck in my head.  Taste the rainbow!

Ice Pops or popsicles, whatever you call them, they are such an easy and healthy treat.  Our 2 year old (affectionately called Munchkin) devours ice pops all day.  Smoothie pops are her favorite.  Virtually every morning Chad and Munchkin enjoy a Banana Orange Smoothie.  I take the left over smoothie at breakfast and pour it into a mold and she has pops all day.  Chad and I are totally hooked on Raspberry Lemonade Yogurt Ice Pops but I also can't get enough of the Gourmet Strawberry Balsamic Ice Pops.  We have loved every flavor that we have shared with you.  But these 3 are our current favs!

Treat yourself to a Gourmet Strawberry Balsamic Popsicle!  A low calorie decadent summer treat.

Fruit of the Islands Ice Pops
makes 15-18 ice pops

6 ounces raspberries, pureed and pushed through a sieve (to remove seeds)
1/2 pineapple, chopped
3 mangoes, peeled and chopped
6 kiwi, peeled and chopped
4 tablespoons honey, to taste

Smash or puree each fruit ingredient, separately.  Taste each to determine the sweetness.  In my preparation I was working with a very ripe pineapple that did not need any added sweetness.  If needed add 1 tablespoon honey to each fruit combination.

Pour approximately 1 tablespoon of each fruit into each ice pop molds.  Start with kiwi, then pineapple, then mango, and finish with raspberry.  I am working with  4 tablespoon (1/4 cup) molds and 3 tablespoon molds, so the smaller molds did not have room for the raspberry.

Freeze according to manufacturers instructions.  4-24 hours.  Serve and enjoy!!!
