Is cheese its own food group yet?  I think it could be.  I would be totally and completely happy to live on cheese.

Provolone is one of my favorite mild cheeses.  I could eat a pound of smoked provolone on its own.  It is one of my favorite cheese for sandwiches, especially the Philly cheese steak.  This Smoked Provolone Cheese Sauce is fabulously creamy and delicious.

Ingredients
 

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 8 ounces smoked provolone cheese, shredded or torn
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper, fresh ground

Instructions
 

  • In a medium saucepan over medium-low heat, melt butter. Add flour and whisk; allow flour to cook for 2-3 minutes to cook out the ‘floury’ taste. Add milk, salt and pepper. Stir to combine. Add cheese and stir constantly until you have a smooth mixture.
  • Reduce heat to low, until ready to serve, stirring occasionally.

  1. This looks sooooo good. I would have never thought about provolone for a cheese sauce! I seriously love cheese and will definitely have to whip a steak sandwich just so I can make this sauce.

    Provolone cheese is my fave, and this sauce is so flavorful. I wonder if it could be adapted to mac and cheese too!
