Lil Texas BBQ Sliders

These BBQ Sliders are packed with spicy, smoky Texas flavor inside and out! Coat beef patties with a homemade spice rub, then slather on plenty of sauce while they’re on the grill. Don’t let the size fool you… these mini burgers are super satisfying! Perfect for a simple summer meal or your next weekend cookout, this is one recipe you’ll reach for again and again!!

BBQ Sliders
As soon as Memorial Day hits, it’s time to bust out all your favorite recipes for the grill — especially burgers!
A long time ago, I was flipping through an old Food Network Magazine featuring some of Bobby Flay’s creations. I came across his Dallas Burger, featuring a spice rubbed patty covered in BBQ sauce, and it served as inspiration for these BBQ beef sliders.
No matter how many new and unique burger recipes I come up with, we always come back to this simple yet total flavor bomb of a bite!
It all starts with a homemade spice rub and my signature barbecue sauce, packing plenty of sweet heat and smoky, Texas-sized flavor.
Trust me, these barbecue sliders are absolutely delicious, and you’ll be counting down the days when you can have them again!

Ingredient Notes and Substitutions
- Ground Beef – An 85/15 blend is my favorite for burgers, leaving just enough fat for flavor and moisture without making them too greasy.
- Lil Texas Spice Rub – Get your spice cabinets ready, because you’ll need an armful of jars!
Start with ancho, New Mexico, and chipotle chile powder to build a layered and complex base of heat. Mix in paprika, dried oregano, ground coriander, and cumin to round out the flavors.
Then comes the special ingredient: chile de arbol! It’s extra spicy but a welcome break from the usual cayenne — though you can use cayenne if needed.
Finish off the blend with kosher salt and freshly ground pepper. The recipe makes more than you’ll need, so save the rest in the pantry for another time. - Barbecue Sauce – Because there’s plenty of heat in the beef patties, you don’t need much here.
I usually stick with my signature sauce, but you’re welcome to try my Jack Daniels version for more kick. Or grab your favorite from the store! - Monterey Jack Cheese – Super melty with mild flavor, it’s the perfect addition to BBQ beef sliders that won’t compete with the spices.
- Dill Pickles – Pickle chips are just the right size for the smaller patties, but you can get away with sandwich slices cut into halves or thirds.
- Slider Buns – I happened to have a package of frozen dinner rolls in the freezer (I use them all the time for my bomb recipes), so I brushed them with egg wash and sprinkled on sesame seeds before baking. They made the perfect buns!
To save time, grab a package of mini buns from the store instead.

Tips and Tricks to Make Perfect Barbecue Sliders
- Add the spice mix to the outside of the patties.
Instead of mixing the spices into the beef, use them as a dry rub for maximum flavor and to help with the char on your BBQ sliders.
The heat from the grill will toast the ground peppers especially, bringing out even more of their heat.
Let the ground beef patties sit for about 10 minutes after coating them with the spice blend before tossing them on the grill.
- Brush both sides with sauce.
Cook the patties on one side first, then flip and brush with some of the BBQ sauce.
Once they’re cooked through, flip them sauce-side down onto a grill tray and brush more sauce on top so it’s coating both sides.
Now’s the time to add the cheese! It’ll melt perfectly as the burgers rest.
- Toast the buns on the grill too.
It adds texture and keeps the buns from absorbing all that sauce, preventing your barbecue beef sliders from becoming soggy.
They’re extra yummy when you brush them with butter first!

What You’ll Need for This Recipe
- Outdoor or Countertop Grill
- Mixing Bowls – I like to have a variety of sizes on hand, and this set has them all.
- Heat-Safe Spatula and BBQ Tray for transferring barbeque sliders on and off the grill.
- Basting Brush – I like this one over the silicone ones.

Serving Suggestions
These cheesy barbecue sliders wouldn’t be complete without a dill pickle! I always have extra BBQ sauce on hand for dipping too, whether it’s the burgers or some fries on the side.
Now, Bobby Flay serves his Dallas Burger with crunchy coleslaw on top, but we just served ours on the side with some spicy grilled corn.
If you want to make your barbecue beef sliders a bit more like Flay’s, grab a bag from the produce section or use one of my slider slaw recipes as inspiration — one even has apples in it!
Storing and Reheating BBQ Beef Sliders
It’s best to keep all the different parts of BBQ sliders in separate containers instead of storing them assembled.
Beef patties with cheese will keep for 3-4 days in the refrigerator, and any unused sauce can be saved for up to 2 weeks (also in the fridge). Store the buns at room temperature in a storage bag or airtight container.
Warm the patties in the oven or in a skillet on the stove before assembling a fresh slider.
That said, if you already put all of the barbeque sliders together and want to save leftovers, simply wrap them individually in plastic or foil and refrigerate for 1-2 days.
Pop them in the air fryer for a few minutes, and they’ll be good as new!
Barbecue Beef Sliders FAQ
I make my BBQ sliders about ½-inch thick with 3 ounces of ground beef. Keep in mind that the patties will shrink a little on the grill, making them slightly thicker once cooked.
You’re welcome to make them a little thinner for an easier bite, especially if you want to start them a bit wider than the buns to account for shrinkage.
Place cooked sliders in a chafing dish or stack them in a slow cooker set to Warm.
If you plan on tailgating, you can wrap each slider in aluminum foil and toss them in a cooler for a grab-and-go snack.
Or, keep the patties in a covered foil tray and assemble them as you serve!
At 3 ounces of beef a piece, plan for 2 to 3 sliders per person. Most little kids are fine with just one.
Keep side dishes in mind as well! The more of those that are available to choose from, the fewer sliders you’ll need.
If you’re unsure, it’s better to scale up the recipe and make too many than not have enough!
DONNA’S PRO TIPS
- Let the seasoned patties sit the full 10 minutes so the rub has a chance to wake up on the meat.
- Keep the patties the same size so they cook evenly and you’re not babysitting one tiny batch forever.
- Don’t press down on the sliders while they grill. You’ll squeeze out the juices and regret it.
- Sauce goes on at the end so it gets glossy and sticky without burning
- Toast the buns just until golden. Too long and they get dry, which nobody needs.
- Have the cheese, pickles, buns, and sauce ready before the patties come off the grill. These move fast
- If serving for a party, keep them loosely tented for just a minute or two while you assemble so the cheese stays melty.

These are awesome, the spice rub is heavenly, even though I didn't end up having 4 different types of chili powder…. For some reason I've always just added the spices before making the patties; the spice rub is miles better!
