A simply delicious and nutritious side dish, these Green Beans with  Garlic are a fabulous compliment to any meal.  Green beans with garlic and olive oil are actually my moms favorite side dish.

Although she prepares hers significantly different than I do, I have to give her credit for inspiring me to make this dish.

I suppose that it is fair to say that I never expected Chad to even look at these (they are green after all).  The fact that he took such beautiful pictures of the final dish is amazing.  Munchkin and I on the other hand were huge fans!

We enjoyed our with Meatloaf with Balsamic Glaze and it was a fantastic combination. Munchkin’s required a quick steam to soften them up a little.  She is not fond of veggies that are that crunchy, yet.  I loved them just blanched and warmed in the garlic olive oil.  Delicious!!!  I can’t wait to have these again.

Course Side Dish
Cuisine American
Method Stovetop
Servings 4

Ingredients

  • 1 pound fresh green beans, both ends snapped off
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, sliced
  • fresh ground black pepper
  • kosher salt

Instructions

  • Bring a large pot of water to a boil and add a sprinkle of salt to water. Add green beans and boil for 2 minutes. Drain immediately and then immerse green beans in a bowl of ice water (to stop the cooking). Once they have cooled, drain the water from the bowl and set aside.
  • Heat oil in a large skillet (about 12″) over medium heat. Add the garlic and cook 2 minutes or until lightly browned, stirring occasionally.
  • Add the green beans, toss in olive oil and garlic. Add salt and pepper to taste. Transfer to a serving dish, serve immediately.
  • Enjoy!

Donna’s Notes

You can also heat oil and garlic in the microwave and toss green beans in the garlic oil.
