Cheesy Sausage Overnight Breakfast Casserole

Cheesy Sausage Overnight Breakfast Casserole is the Ultimate Christmas Breakfast! A simple recipe with fluffy seasoned eggs, cubes of sourdough bread, sweet heat sausage, and sharp cheddar cheese come together to create a glorious breakfast casserole that they will be talking about long after the dishes are cleared.

That is one of the many reasons we are so excited to be partnering with Jones Dairy Farm.

I am sure I have mentioned it before, but I am the "queen of over overnight and make ahead breakfasts". It's not some exciting honor that has been bequeathed to me. It actually arose out of necessity and I blame my mom as I am sure it's some gene that she passed along to me. I am a total night owl. I can go until the wee hours of the morning without batting an eye, but I am slow going when I wake up.

I remember trying to get my mom to wake up Christmas morning so we could open presents. It just about took a pot of coffee and a funnel. haha. In her defense, she was up until 4am 'waiting for Santa'. 

So, needless to say, Christmas morning breakfast would be a major challenge or it would be served at lunch time if I didn't plan ahead.  So, I started creating ways to make breakfast the night before and enjoy it the next morning hot out of the oven, like these and these.


Feeding a crowd during the holidays is that much less stressful too. I stumble out of bed and grab the casserole that I prepared the night before (during my normal hours), and I toss it in the oven. Now, I have time to wake up while breakfast is cooking. Easy peasy!

My latest obsession is this Cheesy Sausage Overnight Breakfast Casserole that starts with Jones Dairy Farm All-Natural Pork Sausage Roll. It is my absolute favorite sausage. With just 4 ingredients (Pork, water, salt, spices) I can feel good about feeding my family.

I love being able to start with a flavorful canvas and really take it over the top. So, I fry up the sausage with red pepper and maple syrup to create a heavenly fusion of my favorite flavors. It is heat and sweet all in one savory bite. Imagine that speckled throughout this fabulous breakfast!

Cheesy Sausage Overnight Breakfast Casserole

Ingredients

  • 1 loaf (14.5 ounce.) sour dough bread, cut into cubes
  • 2 (12 ounce) Jones Dairy Farm All Natural Pork Sausage Rolls
  • 1 teaspoon crushed red pepper flakes
  • 4 tablespoons maple syrup
  • 16 ounces (4 cups) sharp cheddar cheese, shredded and divided
  • 12 large eggs
  • 1 cup half-and-half
  • 1 tablespoon dijon mustard
  • 1 teaspoon kosher salt
  • 1/4 cup sliced scallions
  • Handful fresh parsley, chopped

Instructions

  1. Butter 9x13-inch casserole dish. Sprinkle bread cubes into casserole dish and set aside.
  2. Crumble sausage into medium skillet over medium-high heat. Add red pepper flakes and cook until nearly browned. Pour syrup over sausage and continue cooking as syrup bubbles and thickens. Pour maple sausage over bread cubes in casserole dish. Sprinkle with 2 cups of cheese and toss to combine.
  3. Meanwhile, combine eggs, half-and-half, mustard and salt in large bowl; whisk until combined. Pour egg mixture over bread cube mixture. Cover with foil and chill in refrigerator for 8 hours, or overnight.
  4. Preheat oven to 350°F. Cover and bake until eggs are puffy and set, about 1 hour 15 minutes. Uncover, sprinkle with remaining 2 cups of cheese and bake, uncovered, an additional 10 minutes or until cheese is melted. Top with scallions and parsley. Serve and enjoy.

  1. It isn't Christmas morning until I have had one of these casseroles but yours looks especially great. I mean, they all taste good but yours looks BEAUTIFUL too!
