Best Ever Grilled Cheese Sandwich

My entire family loves this recipe and have all created our favorite versions of this winning combination. This is truly the ultimate. I have a lot of experience creating grilled cheese sandwiches for my family and friends. As an admitted cheese addict, I am sure this comes as no surprise. After years of practice I have developed the Best Ever Grilled Cheese Sandwich.  It all starts by choosing the perfect cheeses.

Truly, no two cheeses are created equal. They all taste differently and they all have their own level of ooey gooeyness {yes, this is a word}. Gooey levels are: soft, semi-soft, semi-hard, hard, pasta filata and crumbly.

My grilled cheese masterpiece begins by choosing cheddar, a staple in the grilled cheese sandwich, along with a semi-soft and a semi-hard cheese. The sweet nuttiness of Swiss and the mild creaminess of Monterey Jack come together with the sharp cheddar cheese to create the ooey gooey trifecta in my grilled cheese showdown.

The flavors and ooey gooeyness of this combination of cheeses is a fan favorite and could only be further complimented by the perfect bread, a fabulous applewood smoked bacon and fresh veggies.

I have tried just about every bread on the market and I always come back to a bakery fresh sourdough bread. With a tangy flavor and a hard crust it is the perfect shell to our ooey gooey cheese machine.

Munchkin loves her grilled cheese as simply made as possible. Just bread and cheese for her. Chad on the other hand, loves the sweet-smoky bite that the Applewood smoked bacon adds to the sandwich.  

And I prefer to take it to the limit. Loading my Best Ever Grilled Cheese sandwich with Applewood bacon for the sweet-smokiness, then fresh and flavorful tomato slices and crisp peppery arugula really create the perfectly balanced, crispy, crunchy, creamy grilled cheese sandwich.

Best Ever Grilled Cheese Sandwich

4 tablespoons unsalted butter, room temperature
8 slices sour dough bread
4 slices Wisconsin sharp cheddar cheese (about 4 ounces total)
8 slices thick cut Applewood smoked bacon, cooked
16 tomato slices
4 ounces arugula
4 slices Wisconsin aged Swiss cheese (about 4 ounces total)
4 slices Wisconsin Monterey Jack cheese (about 4 ounces total)

Place 1 slice of cheddar onto a piece of bread. Top with bacon, tomato and arugula. Add remaining cheese. Place a piece of bread on top.  Butter the top slice of bread.

Warm a large skillet over medium heat. Place butter side down into skillet. Butter slice of bread facing up. Cover. Cook 3-5 minutes, or until golden brown. Carefully flip sandwich, cover and cook 2-4 minutes on second side.  Wipe out pan with a paper town and repeat process until all sandwiches are cooked.
Serve and enjoy!

If preparing sandwiches for the whole gang you can preheat oven to 200 and pop sandwiches in oven as you are done cooking them. When all sandwiches are done you can serve everyone at the same time.

If your cheese is not melting you can help it along by creating steam. I fill a squeeze bottle with a little water and squirt a small amount (a couple teaspoons or less) around the sandwich in the pan and cover again. The steam will help the cheese to melt faster. Make sure you remove the cover and cook the sandwich until the pan is dry or you may have a soggy sandwich.

Take the cheese out of the refrigerator and let it come to room temperature before cooking, this will help the cheese melt faster.
