Grilled Tequila Lime Chicken with Marinade

I am so happy that it is grilling season again.  I am giddy over this Grilled Tequila Lime Chicken recipe!  I know I could grill all year long living in Arizona, but there is just something about spring and summer that makes grilling that much more fun.  I'm in a boozy kinda grilling groove.

I pulled out some of our favorite flavors to cook with and of course tequila is a favorite.  It has such a fantastic taste.  The sweetness of the blue agave and the hint of vanilla.  Oh, you know my favorite is Jose Cuervo Especial Tequila Gold.  The  incredible flavor it gives to this Grilled Tequila Lime Chicken is amazing.

I like to marinate at least overnight.  The chicken cooks up tender and moist on the grill with the most amazing flavor you can imagine.  It is perfect served with some Cilantro Lime Rice and Grilled Corn on the Cob.

I really missed MY grill.  My parents were so sweet to buy us a new grill last summer (early birthday gifts).  You know I am the grill master in this family, and I am very possessive over the grill.  Chad loves that I do the grilling and I do too.  Heck the best cook should wield the spatula, right?

Garlic Beer Marinade Grilled Chicken is fast easy and flavorful.  No chopping required.  Blend in food processor and marinate for 24 hours!

Tequila Lime Chicken

3-5 pounds boneless skinless chicken breasts, washed and trimmed
2 large limes (zested and juiced)
½ cup Jose Cuervo Gold tequila
2 jalapenos, seeded and deveined (minced)
1 tablespoon extra virgin olive oil
1 teaspoon minced garlic
½ teaspoon kosher salt
½ teaspoon fresh ground black pepper
½ teaspoon ground coriander

Add chicken breasts to a gallon size resealable bag.  Combine remaining ingredients in a medium bowl.  Whisk to combine.  Seal bag.  Flip bag back and forth to combine and fully coat chicken.

Place in refrigerator and marinate chicken for 30 minutes-overnight.  If marinating for hours, remember to flip the bag over a few times to keep the chicken coated and moist.

Preheat grill to medium-high.  Place chicken on the counter to come to room temp while grill is heating.

Grill chicken about 4-5 minutes on each side.  Serve and enjoy.
