Bacon Cheese Sauce Over Pasta in 20 Minutes

Sometimes its the little things that makes your day complete.  Like recipe developing with your child.  It truly is something I have dreamed about and it did indeed come true.  One step at a time she is only 3, but I tell you that child has a passion for food already.  She flips through my food magazines and points out food that looks good and asks what it is. Have more time to prepare, make this Paccheri Pasta, it is amazing!

Ingredients
 

  • 6 ounces bacon
  • 8 ounces farfalle pasta
  • Handful kosher salt
  • 1/2 teaspoon nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup frozen peas
  • 4 ounces Italian blend shredded cheese
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions
 

  • Using kitchen shears cut bacon to bite sized chunks and into a large skillet over medium high heat. Cook bacon until done.
  • Meanwhile, fill an 8 quart pot with water, cover and bring to a boil over high heat. Add a small handful of salt (2 tablespoons) to boiling water and cook pasta until al dente (about 7-9 minutes). Pour peas into boiling water 2 minutes before end of cook time.
  • Add flour to skillet and whisk to combine. Cook over medium heat for about 3-5 minutes stirring occasionally to cook out the flour-y taste. Add milk and whisk to combine. Add cheeses and stir.
  • Remove from heat, reserve ½ cup pasta water, and drain when done. Add pasta and peas to skillet and stir to combine. Add pasta water a little at a time until you have a perfect creamy consistency.
  • Garnish with fresh parsley, serve and enjoy!
