1whole pineapplepeeled, cored, and chopped (about 5 cups)
2tablespoonsclover honey
6ripe kiwipeeled and sliced (reserve 10 slices)
Instructions
BLEND FRUIT: Add the chopped pineapple, 2 tablespoons clover honey, and the sliced kiwi (except the 10 reserved slices) to a blender. Blend until smooth, or pulse for a slightly chunky texture.
ADD KIWI SLICES: Place 1 kiwi slice into the bottom of each popsicle mold. Tilt the mold slightly so the slice rests along the side.
FILL MOLDS: Pour the fruit mixture evenly into the molds, leaving about ΒΌ inch of space at the top.
INSERT STICKS: Cover the molds with lids or aluminum foil and insert popsicle sticks.
FREEZE: Freeze for at least 12 hours, or until fully frozen. For best results, freeze up to 24 hours.
SERVE: Run warm water over the outside of the molds for about 10 seconds to release the popsicles. Serve immediately.
Notes
Make-Ahead: These popsicles can be made several days in advance and stored in the freezer until ready to serve.Storage: Store popsicles in a freezer-safe container or bag for up to 2 weeks.Freezing Tip: If the popsicles stick to the mold, run warm water over the outside for a few seconds to release them easily.Ingredient Tip: Use a ripe pineapple for the sweetest flavor and smoothest texture.
