Add the pineapple juice and orange juice to a medium mixing bowl.
Sprinkle the gelatin over the top and let it dissolve into the juices.
Once the gelatin has dissolved and lost its powdery look, add the boiling water and stir until the gelatin has dissolved.
Add the remaining ingredients and stir again.
Using the injector, fill each shot cup until it’s about ¾ of the way full.
Chill for 2 hours, or until set.
If desired, garnish with whipped cream and a pineapple chunk. *SEE NOTES

You can also add orange chunks, maraschino cherries, or lime chunks as a garnish as well. Do not add garnishes unless you plan to serve the Jello shots within a couple of hours after making them. You can’t put the lids on top of them if you’ve added the garnishes, and also, the whipped cream will weep if it sits uncovered inside of the fridge.Ungarnished, the shots will keep in the fridge for up to 2 weeks. Do not freeze.Do NOT add the gelatin to hot water first. It makes the gelatin stringy and chunky. However, you can still use it if you make this mistake - Just use a spoon to scoop out the random chunks that are left behind. Unflavored gelatin doesn’t work the same as flavored gelatin like Jello.You may need to slightly stir the mixture once you add the gelatin, as the powder might not fully sink into the liquid. Just be gentle about it.If desired, you can swap out half of the Malibu rum for white rum. However, you won’t notice much difference in flavor.
