Combine chicken, wing sauce, honey and butter in a medium saucepan over medium heat. Simmer for 10 minutes, stirring occasionally.
Meanwhile separate buns and place them on a cookie sheet cut side up. Turn oven to broil (high) and toast buns until golden brown (about 2-4 minutes). Do not walk away or you may end up with crispy buns.
Pile each toasted bun with shredded buffalo chicken and serve with dressing (if you choose).

We have made this with leftover shredded chicken. Shredding rotisserie chicken or using canned chicken would also work.
