224 ounce Bob Evans garlic mashed potatoes (about 5 cups)
1/4cupsour cream
1/4cupmayonnaise
1ouncepacket ranch seasoning and salad dressing mix
2cupsshredded Mild Cheddar cheese
1 1/2cupscooked baconcrumbled
1celery ribfine diced
2scallionssliced
Instructions
Prepare mashed potatoes, according to package directions. Allow to cool.
Combine mashed potatoes, sour cream, mayonnaise, and ranch dressing mix in a large bowl. Stir until well combined.
Add cheese, bacon, celery, and scallions.
Stir until combined. Cover and refrigerate until ready to serve.
Potato salad is best after the flavors have had a chance to meld (at least 2 hours of chilling).
