Preheat the air fryer to 400 degrees F. If your air fryer doesn't have a preheat function, let it run for 4-5 minutes before adding the gnocchi.
Combine all ingredients in a large bowl, ensuring the gnocchi is evenly coated in the oil and seasonings.
Add the seasoned gnocchi in a single layer to the air fryer basket and cook for 10-14 minutes, shaking the basket every 3-4 minutes or until the gnocchi is golden brown.
Serve immediately topped with freshly grated parmesan and chopped parsley if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. They can be reheated in an air fryer at 300 degrees F for 5-6 minutes or until heated through.Do not boil the gnocchi before adding it to the air fryer. Instead, use them dry straight from the packet. Do not overcrowd the air fryer, or the gnocchi will not get golden and crispy. If necessary, cook the gnocchi in batches. I used a 7-quart Gourmia air fryer to make this gnocchi in one batch. The gnocchi is done when it is crispy and golden on the outside and soft and fluffy inside.Canola oil, vegetable oil, or avocado oil can be used instead of olive oil. The air fryer gnocchi can be added to warm pasta sauce or served as is from the air fryer. I like to enjoy mine with a side of marinara or basil pesto to dip it in. Shelf-stable gnocchi can be found in the pasta aisle at most grocery stores and is typically sold in 1-pound packets.
