I picked up some dried cranberries on sale at Sprouts and some oatmeal, and decided to toast some walnuts and add them in. They really elevated the flavor. I love toasted nuts for that exact reason. They give you so much more than you expect. This oatmeal was amazing!
In a large bowl, whisk together oats, brown sugar, cinnamon, baking powder, and salt. Set aside. (If you are making this the night before, wrap this bowl and leave it on the counter).
In a separate bowl beat milk, eggs, melted butter, and vanilla extract. (If you are making this the night before cover and refrigerate).
Pour wet ingredients into dry and whisk well. Stir in dried cranberries and walnuts.
Spread into a 8”x8” greased baking dish.
Bake for 30-35 minutes. Remove from oven and serve. This is great with a little milk poured over the top too!
Notes
You can bake this on a larger pan (such as a cookie sheet) and get a granola like texture, serve it with milk and you have a fabulously delicious breakfast cereal!
