In a small bowl, whisk together the balsamic vinegar, Dijon mustard, honey, minced garlic (if using), salt and pepper until well combined.
Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
Taste and adjust seasoning if needed.
Store in an airtight container in the refrigerator and shake well before using.

You could add all the ingredients to a blender and blend for a couple of minutes. The dressing will be slightly thicker than if mixed by hand but still as delicious!The honey and garlic are completely optional. You can omit them if you wish. The honey, however, balances the acidity of the vinegar, and you can adjust the amount based on how sweet you want your dressing to be.
