Cranberry Walnut Baked Oatmeal


Happy Tuesday, it is Simply Delicious here at The Slow Roasted Italian.  Every Tuesday we feature dishes that are easy and quick to make, but pack some serious flavor.  Today we feature the Cranberry Walnut Baked Oatmeal.  Cooler days certainly inspired this recipe, although we are warming back up. 


My daughter Em doesn't eat much for breakfast, I have been trying to encourage new things and baked oatmeal sounded great, but adding cranberries and walnuts sounded absolutely delicious and I was so excited to get started!

I picked up some dried cranberries on sale at Sprouts and some oatmeal, and decided to toast some walnuts and add them in.  They really elevated the flavor.  I love toasted nuts for that exact reason.  They give you so much more than you expect.   This oatmeal was amazing!

I mixed it up the night before.  Wet ingredients in one bowl (in the fridge) and dry in another (left on the counter).  Then when I woke the next morning, I preheated the oven and mixed the two bowls together and tossed it in the oven.  It was ready before I finished getting ready for the day.

Hope you enjoy.  We did.  This also freezes very well.  I froze them in portion sizes and all I do is put them in the fridge the night before and they are ready to heat.   You could also defrost them in the microwave.  Either way this is Simply Delicious!!!

NOTE:  You can bake this on a larger pan (such as a cookie sheet) and get a granola like texture, serve it with milk and you have a fabulously delicious breakfast cereal!

Cranberry Walnut Baked Oatmeal
3 cups rolled oats
½ cup brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon salt
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
2 eggs
1 ½ cups milk
1 cup dried cranberries
½ cup toasted walnuts, finely chopped

Preheat oven to 350°.

In a large bowl, whisk together oats, brown sugar, cinnamon, baking powder, and salt. Set aside.  (If you are making this the night before, wrap this bowl and leave it on the counter).


In a separate bowl beat milk, eggs, melted butter, and vanilla extract. (If you are making this the night before cover and refrigerate).  

Pour wet ingredients into dry and whisk well.  Stir in dried cranberries and walnuts. 


Spread into a 8”x8” greased baking dish. 


Bake for 30-35 minutes.  Remove from oven and serve.  This is great with a little milk poured over the top too!

  2. I like this way of making oatmeal. Maybe it will get me to eat it for breakfast! I like to use cranberries and cherries. Great idea with the toasted walnuts!
